    I can totally relate to the personal hygiene part! On my son's birthday party i had to schedule half an hour to shower at 5 am 😂

    again very good ideas, ive already pinched your idea of having one baking day etc so i no longer get muddled, well no more muddled than i normally am lol ;-) would love to see how you set up for photos as thats what my hubby is getting into so i let him take photos of my cakes he just wants to do a more professional job of it xxx

    Sounds like my week, only I only do consulting and tastings on the weeks I don’t have orders. Took me 7 yrs to finally find a rhythm. Once I did, I found my life was way less stressful. Thanks for sharing this Tracy, I see this really helping newbies for sure. Wish I had had this info about 15 yr ago LOL

    If I knew this last year this would have changed my life and I might be baking full time! I had NO idea that you could bake cakes this early and they would keep!! 😩
    I always did mine the night before. Wedding cake, tier cakes, any size cake. It would all be done in 24 hours or even less as I worked part time 1pm-5pm every day! I got so frustrated and stressed towards the end and took too much on that I gave it up after all the fun was sucked out of it and I got made redundant from my part time job. I now work full time in compliance and hardly ever bake. I spent so much money on equipment and tools. I hope I get back into it one day. You were one of the you tubers who got me started in the first place! Love your videos! Xx

      Oh wow, I can see how that would be MORE than stressful!
      Yes, you just have to make sure you sugar syrup them, and then seal them in once stacked with buttercream or ganache. (And also not use any fresh fillings like cream/cream cheese!)

    i feel you girl gurl.. first i love watching your tutorials then i discover that you are vlogging too so i spend my whole day watching your vlogs coz i find it very inspirational.. think i will do some vloging to in the next day just find my courage to do it because i get easily tired also sometimes.. god bless you and keep on vlogging

    Oh God I wish I could do it like you do... I refuse to bake my cakes more than 2 days before delivery becausei workwith small layer (up to 14 per cake) and I can take up to 3 orders during the weekend and sometimes even 1 cake during the week, and i have to do everything between feedings and naps of my twins (3 1/2 month old) and while my toddler is in preeschool... so anything goes... maybe in a year I can actually have a less changing schedule.
    Keep those tutorials coming! I love your cakes !

    I always get majorly confused when people call tea dinner. Dinner is at 12ish, tea is the night time meal 🙈
    Love how organised you are. I used to try to do everything from baking to finishing I'm 2 days. Saw one of your earlier vlogs where you baked one day and ganached and covered the next and then started decorating the day after. Genuinely an absolute game changer for me x

      I was confused by the tea bit too, but it's because I'm American. Here, we don't do tea. We have lunch around noon-ish, and we call the evening meal dinner. And we don't have tea with dinner, unless it's sweet iced tea lol. Love hearing about different customs from different countries

      ha ha yes here in the UK it's usually one or the other. Mainly in the south 'lunch' is 12pm, and the evening meal is 'dinner'.
      Up North to a lot of people 'dinner' is 12pm (that's why they call them dinner ladies at school!) and 'tea' is the evening meal.
      Tea is also a drink - but usually we use the slang 'brew' for that LOL x Confusing for sure!

    Love this! I always have to write down a schedule so I know what day to do what step! It keeps me (mostly) sane. This brought up two questions, though! I am a "hobby" baker with a full time job, so I sometimes have to bake on a weekend before or something. Usually, I freeze my cakes, then thaw the same day I will cut, fill, and crumb coat. Should I be letting them thaw and settle overnight like you do? I have never had a problem with bulging, but I don't use fondant that often. Second, do you have a box tutorial somewhere? I would LOVE to know how you package those cakes for delivery, especially over long distances. Anyway, THANK YOU SO MUCH for every video you post. You are the best!!

      Hey! I don't freeze mine so I cant say for sure - but I would have thought they would have already settled during that process so you should be fine :D x I just place my cakes fully built on some non slip matting inside a regular cardboard box :D x Thank you so much for watching!

    I noticed that you do not refrigerate your cakes. Do you ever bake ahead & freeze them?

    Thanks for the video Tracey. Another item for my 'to buy' list along with the weekly diary is the cake storage box to store the cake overnight before filling and ganaching coz i am sick of fighting with cling film 😆 i usually bake late afternoon so by the time the cake cake cools fully its usually too late to start filling and ganaching so im assuming leaving it overnight is fine? Gives it more settling time maybe??

      Hi! No I don't like to put cakes in the fridge as it makes the sugar paste sweat. Once they are finished they go into a box in my living room as shown in the vid :D x

    I don't run a cake business,but I run my life in a very similar way to you accept I am very I.T challenged so do as little as possible, I do love a list ! It's interesting seeing how you fit everything in,are you going to cake international in London ,I hope so x

    Great help thank you ! Can I just ask as I am due my hygiene checks soon & rather nervous haha ! Do ganached cakes not need to go in the fridge ? Is it the sugar in the choc that makes it keep ... I was told using cream puts your food business in the higher risk bracket . I’d definitely prefer to use it xx hope you don’t mind me asking

    Hi, I love your tutorials and always find them really helpful.. 💕 If you're making a "rustic" wedding cake that's covered in ganache, and then a "rough look" buttercream/cream cheese frosting (applied the night before) would you refrigerate the cakes over night or just leave in a cool place.? Thank you x

      Thank you! If its just regular buttercream it can be left out and it will crust on its own. If its cream cheese that 100% needs refrigerating as it's not shelf stable xxx

      Im in the UK so it can be anywhere from humid and sticky, to freezing cold! LOL

    Hi, how does your cake stay out for a week without going stale ? Do you use preservative ?

      Hi. It's not out a week. The actual cake is only open to the air as it's cooling on a Tuesday. By Tuesday night the cake is fully sealed up in ganache and is eaten on the Saturday. No preservatives. :D

    How do you keep your cake after filling and ganache crumb coating tuesday night? Since you said your not putting cake inside the fridge.

      On my kitchen worktop at room temp. I'm in the UK so it's not hot. The ganache creates a sealed shell around the sponge and I don't use perishable fillings. :D x

    HELP!! I'm trying to start posting vids on utube and for the life of me I cant find get my camera to record longer than 29mins at a clip. I looked into better memory cards etc with no luck. Idk what else to do. I'm renovating my house atm and one of the spare rms I'm turning into a bakery so it's been soo crazy here and wit this vid problem I'm going to lose my mind

      Hi Katherine wowzers you have a lot going on! Maybe do your renovations first and then take a look at your camera in greater detail afterwards, as you'll be less stressed and rushed :D Maybe it could be your camera settings, SD card or maybe what you're trying to film on has limitations. I'm sure googling your camera type, along with your problem will pull up some good results x

      Ooooh it would have been quite a few months in 2009, I was pregnant with my daughter and the smell of the oven just being turned on would knock me sick LOL

    How do you the cakes not go stale

      They are settling under tupperware until they are soft, and then covered in ganache so its all sealed :D Things go stale faster when exposed to air. The chocolate barrier stops air getting in - like wrapping sandwiches in a bag, apposed to leaving them out on a plate :D x Theres also sugar syrup too which keeps them extra moist :D x
