Allergy Friendly No-Bake Granola Bars

    Allergy Friendly No-Bake Granola Bars
    Makes: 6 bars
    Active Time: 15 minutes
    Cooking Time: 0 minutes
    Total Time: 60 to 80 minutes
    Ingredients:
    6 Medjool dates (pitted)
    1/4 cup melted coconut oil*
    1/4 cup quick oats (wheat-free)
    1 tablespoon honey
    1/2 teaspoon cinnamon
    1 teaspoon vanilla extract
    Pinch of salt
    1 cup rice cereal
    3 tablespoons mini chocolate chips (substitute dairy-free as needed)
    1/4 cup dried cranberries
    Preparation:
    1. Line a 9x5 inch loaf pan with parchment paper, leaving an overhang on 2 of the sides.
    2. Soak dates in hot water for 5 minutes to soften. Drain excess water.
    3. In a food processor, combine dates, coconut oil, oats, honey, cinnamon, vanilla, and salt. Blend until smooth.
    4. In a large bowl, combine rice cereal, chocolate chips, and dried cranberries.
    5. Add date mixture to rice cereal, and mix until dry ingredients are evenly coated
    6. Empty into lined loaf pan, and fold extra parchment over top of the mixture. Press down firmly to flatten and compress bars.
    7. Place in fridge for 1 hour or until set.
    8. Lift bars out of the pan using parchment overhang and slice into 6 bars. Store in fridge.
    Note:
    *Coconut oil should be solid at room temperature
