1 cup light buckwheat flour (120g)
1/2 cup white rice flour (70g)
1/2 cup brown rice flour (65g)
1/2 cup tapioca flour/starch* (60g)
1/2 cup potato starch (70g)
1/2 cup seed or nut flour** (50-60g)
1/2 tablespoon fine grey sea salt (6g)
1 tablespoon coconut palm sugar (8g) (or maple syrup)

Its easier to mix psyllium with the flour, and then add the wet ingredients!
Hi! I often do it both ways. Both methods work ;) Do you prefer using whole or powdered psyllium in your bread recipes?
@@FreshisReal I've used both, depending on the recipe, I think the powdered is slightly better. I just find it easier to mix once its in with the flour.
What can I use instead of psyllium?
Hi! If you can't do psyllium at all consider trying flaxmeal or ground chia seeds. If you try the flax or chia as an option you can increase the amount to 1/4 cup instead of 2 tablespoons.
These dinner rolls look amazing! I'd love to make them, I do have a question, I recently went gluten free, I was wondering if there is a substitute for psylium husk? Unfortunately it gives me a tummy ache?
Hi! Can you consume flax? I often use flaxseed meal in bread recipes. Both psyllium and flax work well together but flax on its own can work too but just not as well as psyllium. If you need measurement guidance, please let me know.

Of course, you could! Just keep in mind that I haven't tried this exact recipe with millet. It should be fine. When you say you don't like buckwheat, have you tried a light coloured buckwheat flour? It's not like the darker versions at all. Did you know that you can grind/mill buckwheat groats into a fine flour, and it works really well in GF baked goods! Let us know if you try the recipe and how it turns out!

You're welcome! And thank you for your comment! I wish that gluten-free and vegan baking was that simple! Which flours do you typically bake with? Mixing a few different GF flours and starches helps to create the best texture. When you don't have gluten, eggs or dairy to work with, you have to work your magic with other safe ingredients. Or, as mentioned in the recipe post, you could try and use your favourite GF all-purpose flour mix, but I haven't tried so I can say how the rolls would turn out! www.freshisreal.com/soft-gluten-free-dinner-rolls
Fresh is Real thank you for your reply. I’m a beginner so I’m daunted by all the ingredients. It’s putting me off as I’m lazy. I would prob just try the shelf mix GF flour. I pay so much for GF bread so I would love to make it myself. 🙏🏻
@@Gintonics2 I know storebought bread can be very expensive for sure! Just keep in mind that all GF flour blends are different based on the combo of ingredients they include. I don't often use a storebought mix as I find it makes things gummy. Most likely because of all the extra starches in the mix. If I can give you one more additional tip it would be to consider using a mix for most of the flour (e.i. 2.5 cups) and for the remaining 1 cup use just buckwheat, sorghum, oat, millet that way it balances out the all-purpose GF mix. Hope that makes sense. Better yet, once you have your ingredients, send me a message and then I can make some suggestions ;)

Thank you Chantal. Exciting recipe! I'm going to try these tomorrow. I'll be substituting the rice and buckwheat with sorghum and millet flours. Also half tigernut and half sesame flour for the seed flour part. And tigernut milk for the milk part. I'll let you know how they turn out :)

do we have to have the brown and the white rice flour? Can we use one type? Also if I grind the seeds to very fine would that be ok to use or do I need to buy the actual flour? And do I have to have the stone in the oven? So sorry for all the questions 😊 Thanks 😊
I have a potato allergy. Is there a replacement for the potato starch?
You could consider increasing the other flours to replace the potato starch. So maybe increase the tapioca flour to 3/4 cups and the brown rice or light buckwheat flour to 3/4 cups.

Hi Lucia! You could although I haven't tested it for these rolls! If you try it you could add 3/4 to 1 cup of active lively GF starter then you might have to reduce the other liquids. After the rise and shaping of the rolls, you might have to let it rise for a second time for up to 1 hour before baking. If you're interested I could work on a post that would include these instructions.
