On top of being badly edited and missing the introduction, Bryan and Toni were super awkward together, and Toni seemed like she was either uncertain or uncomfortable as a host, when she’s normally so calm and clear during her food history segments. I hope if Toni continues as a host that she’s given more practice and time to be comfortable in that role. I think she could be great at it, but she isn’t yet, and this video was cringy and hard to watch. Not up to ATK’s usual standards.

Imagine complaining about country cooking recipes on a country cooking channel.
Broadening our horizons with less familiar recipes like this is great, but I also think the majority of this viewership appreciates every advantage we can get, even if it's a new tip on elevating our more familiar foods like chicken and mashed potatoes.

Instead of doing the eggplant in the oven - do it on the barbecue grill with a real fire letting it burn the outside somewhat. Roast some hot peppers, onions, garlic and maybe a tomato or two with it. Use these to make your "Baba Ganoush" - it will taste much better and you would have made Baigan Choka from the Caribbean which was made by indentured Indian laborer's for hundreds of years esp in Trinidad and Guyana working on the Sugar Cane Plantations - they ate it with a simple flat bread - 'Sada Roti', and still do to today. The original recipe was made on an open fire 'stove' called a 'chulha' (made with mud), today they roast in on the open gas stove burner. There are hundreds of recipes for it on YT.

Nope, tahini is a typical ingredient in Baba Ganoush.
Every recipe I have ever seen for baba ganoush, has tahini in it. My middle eastern side of the family uses tahini in it as well.
