Canning Blueberry Pie Filling

  • Have you ever found a great deal/sale on blueberries, but passed it up because you didn't have a way to use that many? let me show you a great way to utilize blueberries so they don't go bad. This is one of the easiest canning recipes ever, and an amazing way to use and store blueberries. Nott only is it a pie filling, but can be used on french toast, pancakes, as a topper for a cheesecake, or even incorporated into a vanilla or chocolate cake.     equipment needed:
    water bath canner
    4 quart jars with fresh lids and rings
    1 funnel for filling jars
    1 ladle
    1 stock pot
    Ingredients:
    5 pounds of fresh or frozen blueberries, if fresh you will need to wash them then boil them for one minute, if frozen let thaw completely, and drain them.
    3 cups 600 grams of granulated sugar
    1-1/8 cup 135 grams of clear gel (cook type)
    7 cups 1.66 liters of cold water
    1/4 cup 63 milliliters of lemon juice bottled
    Optional
    20 drops of blue food coloring
    7 drops of red.

    I used a 64 oz bag of Sam's Club frozen blueberries, thawed and rinsed. It gave me 3 quarts and a pint with an inch and a half headspace. I used the recipe from the Amish canning book. I added a heaping 1/2 teaspoon of cinnamon just because we like it like that. I think that's the same recipe Kneady used. I skipped the boiling for 1 min before starting the process. I didn't understand the need for that. To each his own. Thanks for sharing.

      @@lynntomk thanks for stopping by 😊, when I use frozen I'll get the 5 pound bags from GFS, unfortunately the only Sam's club or Costco is like an hour from us, so we don't get there often. I'm guessing the boiling is just so the clear gel is evenly dispersed. I really like the Amish canning book 😊❤️
