    I tried this method and it was lovely. Although, the flavour was very subtle - how can I make it stronger? Would I add more coal?

    If i use this method to smoke biryani, will the smoke and flavour penetrate enough to reach the rice at the bottom or do i have to follow additional procedure to get even flavour throughout the rice?

    PERFECT! will do this! thanks! will actually try this with dry coconut shells!
    NOTE: DO NOT USE BRIQUETTES, it contains chemicals! USE LUMP WOOD COAL or smoke wood like mesquite, hickory, etc.

    Do you always cold smoke after the dish is completely cooked. I see you rest the katori directly on the paneer. Won't it burn?

      Hookah coals work good (natural coconut husk based. I avoid the instant heat coals as they have chemicals)

      It was ghee...also known as clarified butter.

      Charcoal is charcoal. It doesn't have a flavour. Just get basic black solid charcoal that you would use for a bbq

      Dont use coal again when cooking barbecue you dont use the same coal same goes for this method

    Which coal brand did you use? Because today i went to buy coal to do this and there seems to be different types and seems like some can not be used for food. Do i need to buy a large bag of coal that is used for a grill or is there a brand that sells a small package?

    Ma'am I have electric burner I don't have gas stove please share some good technique to burn coal without gas stove.

      I have never cooked Arabian food before. I dont have gas stove either. What I plan to do is use my foldable camping stove which uses a gel can such as restaurants use to keep foods warm. You would place the stove part over the gel can, light the gel and you get an open flame. Then you can heat the charcoal. Just be safe with it!

      Ghee.. Which is just clarified butter. Any oil would do as well.

    What type of coal? What brand? I keep trying this method with coals used fir hokkah and i never get that coal smokiness in the food..tastes like nothing from it

      Wrong coal. Look for wood or charcoal

      Ghareeb al Ghoorba well I go to my local grocery shop/supermarket. Maybe it depends on location. Try asking your local restaurants where they purchase it from.
