Vegan Calamari - Fried Oyster Mushrooms
5-6 king oyster mushrooms
Nori sea weed - about 1/2 cup
Oil for frying
Flour 2 cups
Seasoned Breadcrumbs 2 cups
Seasonings ( use whatever you want)
Cayenne
Black pepper
Garlic powder
Onion powder
Smoked paprika
Adobo
1 -2 tbsp salt
Old bay
Club soda
About 2-3 cups water
Citrus for garnish
Slice the mushrooms about 1/2 to 1/4 inch thick. Using a cutter or tool cut out the center of each disc. Reserve the middles and tops for frying as well.
Bring the water to a boil and add about 2 tbsp old bay, followed (carefully) by the mushrooms. Cook for about 5-7 minutes, drain and dry any excess water off.
Add the flour and an equal amount of each spice followed by the salt and nori ( about 1-2 tbsp or so) mix well. Slowly mix in the club soda until you get a semi thick batter. ( A little thinner than pancake mix )
Dip the mushrooms into the batter then toss in the breadcrumbs. Place in a platter or rack when fully breaded. Heat up the oil until about 350. Fry in batches for about 3-6 minutes or until the shrooms are crispy and floating. Drain and serve hot. Garnish with your favorite citrus and sauce of choice. As always, please enjoy.
