i have franklin pit number 55... the airflow and consistency is unbelievable. i've had 4 cooks on it so far. beef ribs, pork ribs, thanksgiving turkey and brisket. having a good pit makes all the difference in the world, and this pit is as well made as they come.
It’s great isn’t it. The draw on it is definitely a noticeable factor. You can hear and see the airflow pulling through and it makes the fire management so easy. I’ve had a couple of cooks on this now, and definitely think it’s worth the cost. Though I haven’t used a comparable pit.

What’s odd is the firebox door has the airflow cutouts (including logo), but looks like there’s no way to open or close vent/control airflow (temperature). Is that right? 🤔
Possibly because they control airflow via the door opening. You never really want to choke out a flame, temperature is controlled by the amount of wood/coals that’s fed into the fire.

This smoker seems too gimmicky. If you look at all the top pit makers (LSG, Shirley, Jambo, etc), none of them do this.
Yeah, it’s definitely different. Though I will say that Aaron Franklin is known as one of the best pit masters in Texas, he’s built all his pits by himself out of oil tankers, so maybe he has his reasoning for the permanent cutouts
You control your fire but the amount of wood that you add to it. Not with dampeners or cutting off air flow. This pit is simple. Use 9 inch long splits. 1 is 150, 2 is 225., 3 is 275-300. Every single time. Fire management is so much more than controlling air flow.
can you do a recommendation video on smokers for beginners? ive been looking at all sorts of smokers from the WSM to the Kamado Joe and the MasterBuilt Gravity, an offset smoker would be great but they are horrendously expensive so it would be nice to get some advice, how did you start off? what would you recommend and why?

I own a Weber 22" Kettle. I cooked on those for 38 years. You can smoke on it if you set up your charcoal with the snake method and use a pellet smoker tube for additional smoke. I upgraded and bought a Masterbuilt 560 gravity smoker. I never thought I would walk away from my Weber. The Masterbuilt can do what this Franklin offset can do plus more! You can maintain 165F to smoke your salts, fish, cheeses. Of course you can dial in 225F all day long to smoke or infuse smoke into your steaks(up to 105F). Then pull your steaks dial it up to 700F and in ten minutes your ready to reverse sear your steaks or toss a pizza in it. Let me know what you went with. Take care
No, I really don’t think it will. I think the thickness of the inner firebox is 1/4”. It would take a long, long long! Time to ever get through that. That is, providing you clean out the ash regularly and don’t allow it to get damp. Wet ash can cause rust and problems with steel.
Only thing I don't like about it is the way the firebox door doesn't go all the way to the bottom of the fire box. Really makes it difficult for sweeping out ashes with that lip in the way.
There’s coated versions you can get. This one isn’t coated. it will get that cool patina look if you take care of it. (Rub the outside with beef tallow)
Double welding isn’t any better than a single weld. It just means they didn’t have good enough of a machine to do it in one pass. If anything it’s a con. You have to be a very good welder to do a double pass and get full metal penetration
Makes sense. They’re great pits. Pro smoke bbq like to understand how all these pits work, and make sure they’re bringing in only the best into the UK for sale. We’ll run these against their standard offering.
TMG pits by "The Metal Guys" in Knoxville TN has a comparable pit for just under $2,000. Is called Heritage model and is 24" dia. pipe and even includes fire grate basket.
Someone seeking validation for their huge expenditure! 😂😂. A welder made pit is a welder made pit and it don’t make a shit who’s name is carved out in the door! My dad was an oilfield welder and I started building offset smokers out of oilfield casing at the ripe young age of 14! One just has to put a little thought into fluid flow dynamics and the fact that heat rises, to create proper air flow. Franklin has his reputation and that’s great, but having his name on it doesn’t deem it superior compared to any other well thought out smoker and anyone can copycat his specific design/dimensions for that matter. Pay that extra $1000 for the name and brag at the backyard BBQ, but anyone can carve out a name with a plasma cutter! 💪
You obviously don’t appreciate the quality that goes into his smokers. It’s reasonably priced imo Franklin is a good welder and made all his pits at his restaurant out of old propane tanks. People that are buying these pits know exactly what they’re paying for

The best smoker for the price imo is the wsm. 22" is $429

It does not. It’s essentially a smaller version/replica of Franklin’s pits at the restaurant. Designed to cook directly on the firebox floor
