Question, if you please: why put shredded cheese on the outside? And use, of all things, american cheese with the sweet red pepper slices on the inside?
This appears as something to appeal to western tastes. Who can’t handle actual Mexican cuisine. (I’m sorry to be a downer; I simply believe that to enjoy another culture’s food, you have to actually eat it.)
Even though I’m western, if it were me (and I’m a white, somewhat-experienced “westerner”), I’d choose chile verde over the sweet red pepper (which is way healthier).
For example, Anaheim peppers, which taste *great* in omelettes, or even in just wet scrambled eggs (please ask if you don’t know what that is).
Then I would place shredded cheese (a combination of shredded cheeses like asiago or asadero, pepper or monterey jack, cheddar and queso quesadilla - or *whatever* you like…fyi - for your information - it tastes best with goat cheeses) >inside< the tortilla, and chop the verde peppers up into small pieces, not slices.
And then cook it. Probably with a few chopped-small onions (never use red, or what are called, purple onions, always use yellow or white onion), some fried garlic, black pepper, and cayenne - an ingredient that is healthy to all, but for the most part ignored in western cuisine).
And then proceeded. Please remember, this is just my take on the recipe, to make the dish to what I believe is much better.
