    century eggs are actually really good, but not when they're... whole. My parents like eating them just with soy sauce but I think it's pretty gross that way. You gotta make congee with TONS of scallions, pork bits, soy sauce, and chopped up century egg cooked in. Then it's amazing! You can't just plop it on top!

      Not so much fat as unhealthy. Soft in the middle, face puffy. Jamie is built that way, he isn't too overweight to the extent of it affecting his well-being.

    Mmm...century egg, but they're eating the egg like Americans eat Vegemite. We don't eat them in such big bites by itself, it's to add flavour and texture to congee or tofu. But I understand that it wouldn't be as entertaining if they just ate it and go "ok".

      Well.... Eating them in whole slices is also good, though. With either black vinegar or soy sauce on top, I prefer soy sauce myself. And a dash of sesame oil.

      Joseph Chang I am American and love Vegimite. the first time I had century egg I didn't like it. I tried it again about a year later and while I don't mind the taste it can't handle the texture. it's a mind of matter thing, but I can't get my mind over it

      Yeah, my family eats it too, and honestly we put in tiny slivers of it into congee. It's delicious but I'd never eat it straight up.

    I don't get why people say Mike is fat... sorry, but fat is something else, he's just not very thin. He's still slimmer than the average, though.

    Ultimate Budget Battle maybe? Everyone gets 10 pounds or so, and has to prepare the best meal for 2 that they can. Perhaps you can even do a bit of time following them in the shops as they hunt for the best deals and such.

    a little bit of defense for the "smelliest fruit in the world' (aka glorious durian). the durian that we get here in the UK tastes NOTHING like how it is back home in Asia (Malaysia for me!). i think the ones here taste horrid too. if you guys ever get a chance to visit Malaysia, get a local to bring you to a durian stall, and try a REAL durian!

    I love chicken hearts, never had them like skewers, but I am used to them since childhood. My grandma used chicken, rabbit and goose hearts in her soups and broths. Also kidneys, liver and necks. Absolutely fantastic! (Czech republic) Actually before mankind started to farm, early hunters generally gave meat to their wolves / dogs and ate the entrails themselves for the vitamins bomb.

      we also eat soup with the chicken hearts/lungs/liver here, we call it 'molleja' in spanish, but we'll eat it in the winter, to cure a cold, and even hangovers lol it's soooo good

      I am from Poland, so culinary culture is a bit similar. I had hearts in soup as a kid, it's good, but you really have to try them grilled. Add some cumin, it's really good.

      We do curried chicken hearts in South Africa. So good, I'd have chicken hearts any day of the week. We also eat beef tongue very often.

    Tongue is the best served with Mayo / mayo&mustard mix and the vinegar is not necessary . Chicken hearts open their flavour best in subtle flavour soups and the texture is actually really pleasant

    those century eggs are looking delicious, you guys should dip it into chinese vinegar mix with garlic and sesame oil. Or just make rice porridge with minced pork, that's how we eat it in China, seldom people will eat it directly

    Now that i'm rewatching it, it would be nice to either make an Ultimate Battle with "exotic meats" or a few recipes with unusual meats. Like the hearts of chickens are delicious af, we also have a soup in Poland made out of the blood of ducks which is so so tasty !!!! :D Would be interesting to see you guys make a full blown meal with your own twist again !!! love those exotic meat videos

    I'm from Poland, and to me pork tongue and chicken heart are not exotic. We call this offal, and it is common thing in our tables. Therefore haggis for me was a normal thing to being in Scotland. Greetings from Polish and specific to James, because he's from Scotland :)

      I love chicken hearts in gravy over rice. In fact have some in the freezer right now. I poach with seasoning, take out, trim and cut in half. Make the gravy using the stock and some sliced mushrooms.

      well, chef Andrew Zimmer was once cooking this squirrels when they're "in season" as in, their population at the park has gone beyond normal and hunting them for consumption is permitted. Might be in Central Park, can't really remember. But he said it taste like chicken, so yea

    I have had squirrel a number of times as a child. Mom cooked it so well. I will forever have fond memories of it. Chicken and Turkey hearts? DELICIOUS!

    Chicken hearts were my favourite part of the chicken growing up. I‘ve also had the tongue of lamb numerous times (I come from Morocco, so almost every Eid), and I got to say it is one of the tenderest pieces of meat and I absolutely love it!

    You're not supposed to eat preserved duck eggs like that. Nobody in China eats them that way. There are many ways to prepare them, to name a few: dice them up and mix them into pork porridge, or dice and then mix with tofu, soy, ginger, spring onion and sesame oil. In short, we don't eat them plain and whole.

      I've eaten them heaps of times with Congee, so do my friends but normally not a big piece at once. They want to make good TV like Asian or American people eating Marmite as a big mouthful.

    Ooh I adore chicken hearts, they're pleasantly chewy. We usually buy them together with livers, and cook them with a bit of tomato sauce and mushrooms. Delicious with rice or mashed potatoes.
    Never had pork tongue, but I have had cow tongue which is larger. Pretty good and makes nice soup. You wimps :P

      Yessss! We eat cow's tongue all the time where I live! tbh it's so expensive it's a treat (at least to me), but the taste is amazing, I love eating it in tacos... also whenever we eat roasted chicken I love eating the lungs, heart and everything else from the chicken it's got lots of flavor

    Venison/Elk is great. I pressure can venison, then when I use it take it out of the jar, add some beef stock and bring it to a simmer and serve it in a bun. Squirrel can be very good as well, but skin it first, section it up, dredge in flour and spices and pan fry it in some butter and olive oil.
    The chicken hearts we also pressure can. Then when preparing them, dredge in seasoned flour and pan fry in butter and olive oil. The pressure canning makes them nice and tender.

    The Century Egg is quite a nice commoners food in Hong Kong and it is diced in to small cubes, then cooked with lean pork (optional: marinated) in porridge for a long time. And it tastes great!!!
    But as tasty as they are, be careful of fake century eggs from China......

      Yan Tse century egg is so good with stir fry as well with lettuce tomatos and very thin slices of meat with a dipping sauce of fish sauce, sugar and lemon juice

      Yan Tse I agree but the bigger bits of century egg definitely make me gag a little, I need to eat it in much smaller pieces in congee
      I would definitely not eat it in the big pieces the way Ben served it up

      wingedkitsune6​ yeah... besides, the flavor is usually infused into the porridge/congee, which would turn a spoonful of the product a taste explosion of umaminess and savoriness. So big pieces doesn't do the job well.

      they ate a quarter of it, barely with any of the congee lol. The taste will be too strong for someone who have never tasted it. Mostly because the strong smell of the yolk I think.

    We didn't have much money when I was a kid, so we usually got cheap stuff like cows tounge, blood pudding, baked cauliflower etc. Everyone once in a while we got a bit of dried reindeerheart (expensive), that is delicious. I didn't enjoy surströmming when I was a kid but I love it now, you put a little bit of it on flatbread with butter, potatoes, sourcream and red onions.

      Undercooked or not, I love chicken heart in any shape and form. Same with pig tongue (or ox tongue, or duck tongue...) Well, I'm Asian, I guess that explains a lot? (I'm so ready to bite into that whole tongue! Mouth watering!!)

    dipping century eggs in Chinese vinegar helps take off some of the "nauseousness"
    if you separate them you find that the "white" is actually pretty flavourless and not bad, it's the yolk that is a little difficult to eat for beginners since its so creamy and pungent-tasting (which is where vinegar really helps)

      Lengua tacos are my favorite from the taco truck! Favorite experience at a Mexican restaurant: we were sitting at the bar. I was happily eating a few lengua tacos, and I understood just enough of the conversation next to me to understand they were asking the server if the gringa knew what she was eating. I was oddly proud of myself.

    1. Elk. Good meat that. Here in Canada it is part of the class of meat known as "Venison" which also includes Deer and Moose. Dry because non domestic animals are low in fats (we domesticated fat nor flavour). I like them mixed with some pork belly and done as sausages that are only flavoured with garlic and smoke from the smoker.
    2. Squirrel is a very common meat in large regions of the USA and yes Peru guinea pig is as common as hot dogs on street corners. I have both on my 'to eat' list, I have in mind to try them minced in a dumpling type dim sum or perogie.
    3. And the worms ate into his brain... thank you Pink Floyd not sure I can ever look at wormy like critters and eat them BUT would try them if in a group.
    4. Hearts are sold individually yes, but more often in mixed packages called giblets. Treat them much the way you do kidney and make a steak and giblets pie and you may find you like them a lot. I pre-portion mine into ~50 gram zip lock bags, and add them to rice when cooking rice for myself (a simplified take on Louisiana Dirty Rice).
    5. I love congee and I have tried Century Eggs the exact same way (and a few other ways) and I have to say that I just have not been able to develop a like for them. I find that Tea Egg or Salted Duck Egg is better on congee.

    You can also find chickens hearts, livers, and gizzards a lot in the southern states. I like the gizzards. Soak in milk for an hour. Boil till cooked and make sure to keep it from boiling over. Egg wash and flour. Fry till golden brown.

    I have eaten all of those and they all tasted good. The pig's tongue is very good in a curry, the moth larvae are great deep-fried after being marinated in finish sauce and chilli sauce. Chicken hearts are easiest served grilled after being marinated in Japanese soya sauce, honey, black pepper or paprika and a touch of chilli juice.

      I think chicken hearts (compared to a lot of meats) have a huge huge range of how good they can be to how awful they can be. Not knocking Ben’s skills but it probably wasn’t an ideal preparation

    I have to say, as someone who is Korean and lives in Japan both of us are very fond of ox and pig tongue, however boiling it is probably the worst way to enjoy it! Real way to get the best of it is slice it paper thin then grill over charcoal gogi (Kbbq) or yakiniku style wrapped in ssam (purple lettuce) and a good smear of sesame oil mixed with salt, pepper and garlic or ssamjang (a type of Korean dipping sauce made from fermented soybeans, chilli paste and sesame oil with sugar or rice syrup)

    Been enjoying chicken hearts in gravy over rice for years. Cook in seasoned water with onions, take out, trim and slice. Make gravy out of the stock and sliced mushrooms. Going to make it soon too.
