Oliv oil is a common mistake, they use sunflower oil in South America, and it's better. Bitterness of oliv oil, garlic and pepper is too much, that's probably why you had to put that much vinegar to balance it.
Also red wine vinegar is the authentic version but apple vinegar is fine too.
In Brazil they also add a spoon of sugar, great version !

You’re absolutely right. Olive oil has its purpose but not in a classic chimichurri. Not hating on how others choose to make it but argentinians don’t go out of their way to add olive oil to it. Argentinians give you the side-eye if you add evo. Stick to something neutral.

Good quality olive oil is not bitter, it's only the store bought one because they pick the olives too early. And olive oil is more healthy than sunflower oil because it contain a lot of antioxidants.

i couldn’t get my parsley fine enough so i put all of my dry ingredients in my blender and used the grate setting, but it only grated the bottom no matter how much i shook it, so i said fk it and added everything in the blender and hoped it would mix. it did, but it liquified it and i was horrified since i had been up for hours prepping dinner 😭 so i strained it and saved the herbs thank god. after i just added the oil (someone in the comments said use sunflower oil instead so i found an olive/sunflower oil), acv, pink salt, pepper, and crushed red pepper. my family loved it 🙌🏾

It intensifies the oreganos flavor and makes it more aromatic.
