The decomposition of nitrous into nitrogen and oxygen is an exothermic reaction, thus there is a pressure increase as the oxygen is cracked free from the nitrogen.
Three things: 1) Nitrous gets to the engine as a liquid, where it is then evaporated into the mixture. Being a liquid means it's delivered to the manifold a thousand times more densely than air, which is always fed in as a gas. 2) Nitrous is 33% oxygen. Air is only 20% 3) And, of course, it cools off the air like you said. I listed them in order of importance.
It's not the use of nitrous that's bad it's the miss use of it. Just like with anything else when you start modifying an engine if you do it improperly you're in for a bad day

It's not providing more oxygen to burn it's the energy released atomically that is the extra power .......not from the pressure of the fuel burn

You onlt need the air to be cold as it flows past the valves. Once it's inside the chamber and compression happens, it'll be hot.
