DESERT FOOD
1. FAMILY HOME: Kopichi + Eshkene Rob-e Annar + Kalajush
ADDRESS: Varzaneh, Iran
🍞KOPICHI (Traditional Varzaneh Bread): Mix ice water, salt and yeast together. Add flour and knead until it becomes consistent texture. Let the mixture rest for 2 hours. Portion dough and dip in spices including fennel, safflower, caraway, black cumin and sesame seeds. Roast in modern steel tandoor for 8 minutes.
🇮🇷ESHKENE ROB-E ANNAR (Pomegranate Dish): Start with oil made from sheep dumba (fat tail) and cook with saffron, rose water, apple, turmeric and onion. On the side, mix together pomegranate paste, grape molasses, water. In hot pot, add wheat flour, turmeric,and mint. Add pomegranate mixture and oil that comes from the milk of the sheep.
🍜KALAJUSH (Curd Soup): Start with same dumba oil and add onion and mint. Soak curds with water, then strain out the liquid by hand. Curds can be used over and over. Add mint, turmeric and finally the curd juice. Then add sheep oil and minced walnut.

2. DESERT: Ostrich Kebabs + Pitu
🍖OSTRICH KEBAB: Defeather and clean the ostrich. Cut into small chunks. Marinate meat in lemon juice and onion. Place meat on skewers and roast 45 minutes.
🐐PITU (Mutton Stew): Place sheep fat, mutton, tomatoes and potatoes in a metal pot. Place pot over charcoal and cook for two hours.

I am from Iran and some of this stuff I had never seen before, haha. Dude, you took your time and reached out deep. Some of the best honest representation of what you can expect to see in different parts of Iran. Great job.
Everone note that not so many Iranians/ Persians smoke dung on a daily basis, or on any basis at all. I have never done it, and neither I know anyone who had done it, except for my grandpa, and like years ago. So, take what you see as "instagram worthy" material, not something that is constantly happening. Nevertheless, l cannot appreciate the series anymore. Fantastic job, nice production, too.
I didn't think that at all. My take on this was based on its locality and not the entire country. Nonetheless, it was a beautifully represented town. The colors, homes, people, scenery, culture of this town was all so lovely.

I think it's like the country version of Iran not the normal city lifestyle. Like in the US many people who live in backwoods Ares eat squirrels frogs snakes even possums and raccoons. That's not what everyone eats in the US but in the country to culture is much different from the city. There are also people in the country who "read chicken bones to tell the future." No one in US big cities do stuff like that. I think its like that.I live in the country and I kill goats and eat them and that type of thing. People in the city would never do stuff like that.

Honestly, Sony got on my nerves when I first watched his shows. His food shows have matured and grown to be one of the best, if not the best of the best, way above Mark Wiens and The Food Ranger.
He's keen with getting a good connection with the local communities and gets us right there. The music and the depth of the content have elevated this show to be on of the most professional and entertaining ones. Way to go Sony! We are all watching you and enjoying every second of it. Cheers!
