I grew up in a Filipino family in South East Alaska and our adobo is different. Ours is more like a stock with the meat boiled in it. We'd always freeze the left over stock and reuse to either make more later or ramen.

Great video. A cultural note…Filipinos do not use chopsticks. The primary utensil is the spoon, and the fork used secondarily to push food onto the spoon which then is put in the mouth.
@@KuyaEnan You are wrong . When a Filipino uses a bowl, there is no need for a fork. The inside wall of the bowl is used to press the food onto the spoon. The Chinese and Japanese, when not picking up individual pieces of food with chopsticks, raise the bowl up to their faces and use the chopsticks to pull food into their mouths. Filipinos do not use that technique.

So my wife is from the Philippines and I have learned a lot of Filipino cooking. I have taken my knowledge and now actually cook my Adobo in the Sous Vide and then finish it off in the pan to sear it. Also, don't use chopsticks, the Filipinos use Fork and Spoon!

As a long time Filipino follower, i got to tell you, the ingredients are right, I think you over simmer it. But it still looks amazing. And lastly we never use chopsticks to eat adobo, the best way to enjoy it is to eat it with barehands and hardboiled eggs.

Looks amazing! As a professional chef I immediately get inspired! If you ask me? You should try to marinate the beef in the adobo overnight (in vacuum), smoke it the next day and sear it. Bet you it will be even better 😉

Adobo is technically the technique of marination to salt (or soy sauce) and vinegar. There are variations of adobo that doesn't have meat, instead, we use vegetables if meat is not available.
you can make beef adobo and just cook it like pork adobo. but you have to use the tougher cuts of meet that has lots of connective tissue like brisket and then you braise that stuff for a couple hours or you can sous vide them at a low temp for like 8 hours and then just sear it for color and extra flavor then just pour the sauce on top.

This is the generally accepted version of the adobo which you exectuted perfectly Uncle Guga. In the Cebuano/Bisaya speaking part of the Philippines, we call that Humba. It is sometimes cooked with bananas or banana blossoms. Sometimes with stara anise for extra flavor. The sauce can also be used to marinade hard boiled eggs which is amazing! The Adobo that we have here is deep fried to a crispy golden brown. Similar marinade but spicy coconut vinegar is used.

My aunt who moved here from the Philippines would use a pressure cooker to make hers. Using bone in thighs, she would cook it until the bones were actually soft and edible. Btw when doing it with pork, smoke it at 175-200 range for an hour or so before marinating. It takes it to a whole nother level of tongue punching goodness

Every Filipino have their own version of pork adobo, and I think you did a good job. Everyone likes it oily and almost a little left of the sauce because it'll be more strong flavor and good with the rice.
Another way to cook pork adobo is just with vinegar, and just letting all the vinegar dry out. but this is perfect as it is! I love it. been watching your shows and yeah tried the steak recipes too. Mom loves it!

As a Filipino, it is very authentic and classic. Actually, some of our Adobos here can be saucy, some of us loves to pour it on hot rice. Most of us nowadays, the authentic Adobo does not really add hard boiled eggs, but most of us Filipinos added it now, as another meat topping included with the pork belly. All ingredients are accurate. It is well made, and it is same as Uncle Roger explained, leaving it with peppercorn overnight adds the peppery taste to make it a bit spiced, since Chili does not really complement that much from our majority.
I am one of your Filipino fans and i can say that you nailed that recipe Guga....my recommendation, marinate it for 6 to 12 hours for much better results.... Also, we Filipinos use spoon and fork for most of our dining experience...but it was impressive that you used chopstick since this recipe is known to be oily.... Also, what the hell Leo....that is a main dish...don't be like Jaime Oliver saying that egg fried rice is side dish...just kidding Leo, i know you didn't mean it, unlike Jaime Oliver....
Traditional Adobo do not use dark soy sauce because itbis not always available in the market, specially during those times. We only use the common soy suace you can buy in the market, vinegar, lots of garlic and a lil bit of salt. The only ingredients are meat, salt, vinegar, and lots of garlic. Every household has their own version of adobo. But the basics are Matandang Adobo ( no soy sauce), Adobong Dilaw, Adobong Pula (with soy sauce). It's up to you if you like it dry or with sauce. If you add sugar, banana blossoms, star anise, and tausi it is called "Humba".

@guga, you could add half a cup of water when you add the rest of the marinate. Keep the heat to minimum so the dish won't dry out during the slow cooking process, the glaze will be evenly distributed, the meat will tenderize better and the fat will render better. When eating Filipino food, skip the chopsticks, no spoon nor fork. Just wash your hands clean with soap, dyr it with a towel and eat with your hands.

The title of the video itself just made me excited! Plus, calling the adobo sauce "MSG on crack" somehow made me cringe, but it's really THE best sauce ever, due to its mix of sweetness, saltiness, sourness, and umami. Typically, we don't use two types of soy sauce. Just one type is already enough, as it's what a Filipino family is usually capable of buying from the grocery. And y'all think Uncle Roger is the greatest food critic on adobo? Wait till you hear us Filipinos react on this dish that we are very proud of. I don't even know why "spring onions on adobo" is even a thing, when we Filipinos don't even add that most of the time. Just soy sauce, vinegar, garlic, sometimes sugar, and choice of protein...that's already perfect. Also, using chopsticks on adobo? Yeah, eat your Pinoy adobo whichever way y'all want, but it's either spoon-and-fork or our very own hands. That's about it. Adobo steak sounds amazing, but i wonder how amazing it would be if you did the entire adobo process with some fatty short rib. Theres also a super simple and delicious side dish you can make with it, which is garlic rice. You just stirfry some leftover white rice with some vegetable oil, lightly toasted garlic, soy sauce, and msg. Definitely wanna see some more takes on adobo!
Filipino people don't use chopsticks on our adobo and rice, barehands is the way to go, or spoon and fork, but that version of pork adobo looks really rich and flavorful! we call that version "pa-iga/pa-tuyo" or dried/evaporated, because the sauce are almost dry or evaporated.

Good cook on the adobo. The whole peppercorn usually goes in during the marinade, but what you did was fine too... On a side note, we Filipinos don't use chopsticks unless eating at a Chinese, Japanese or Korean restaurant.

In the Cebuano/Bisaya speaking part of the Philippines, we call that Humba. It is sometimes cooked with bananas or banana blossoms. Sometimes with stara anise for extra flavor. The sauce can also be used to marinade hard boiled eggs which is amazing!
The Adobo that we have here is deep fried to a crispy golden brown. Similar marinade but spicy coconut vinegar is used.

My aunt who moved here from the Philippines would use a pressure cooker to make hers. Using bone in thighs, she would cook it until the bones were actually soft and edible.
Btw when doing it with pork, smoke it at 175-200 range for an hour or so before marinating. It takes it to a whole nother level of tongue punching goodness

As a Filipino, I am so very proud that some non-Filipino make a Filipino adobo, and to confused to the Mexican version of Adobo... second we don't use chopsticks, we sometimes using it an East Asian stuff cuisine, we used spoon and fork, and clean hands for "boodle fights" or "kinamay"...

Another way to cook pork adobo is just with vinegar, and just letting all the vinegar dry out. but this is perfect as it is! I love it. been watching your shows and yeah tried the steak recipes too. Mom loves it!

As a Filipino, it is very authentic and classic. Actually, some of our Adobos here can be saucy, some of us loves to pour it on hot rice. Most of us nowadays, the authentic Adobo does not really add hard boiled eggs, but most of us Filipinos added it now, as another meat topping included with the pork belly. All ingredients are accurate. It is well made, and it is same as Uncle Roger explained, leaving it with peppercorn overnight adds the peppery taste to make it a bit spiced, since Chili does not really complement that much from our majority.
I am one of your Filipino fans and i can say that you nailed that recipe Guga....my recommendation, marinate it for 6 to 12 hours for much better results....
Also, we Filipinos use spoon and fork for most of our dining experience...but it was impressive that you used chopstick since this recipe is known to be oily....

Traditional Adobo do not use dark soy sauce because itbis not always available in the market, specially during those times. We only use the common soy suace you can buy in the market, vinegar, lots of garlic and a lil bit of salt. The only ingredients are meat, salt, vinegar, and lots of garlic. Every household has their own version of adobo. But the basics are Matandang Adobo ( no soy sauce), Adobong Dilaw, Adobong Pula (with soy sauce). It's up to you if you like it dry or with sauce. If you add sugar, banana blossoms, star anise, and tausi it is called "Humba".

No big deal and not funny at all. You could've commented on the steak adobo which is rather more unusual than the chopsticks used on the pork adobo.
@guga, you could add half a cup of water when you add the rest of the marinate. Keep the heat to minimum so the dish won't dry out during the slow cooking process, the glaze will be evenly distributed, the meat will tenderize better and the fat will render better.
When eating Filipino food, skip the chopsticks, no spoon nor fork. Just wash your hands clean with soap, dyr it with a towel and eat with your hands.

Adobo is a dish that you can customize on your own. You can make it any style you want, just use ingredients found in Asia.
The title of the video itself just made me excited! Plus, calling the adobo sauce "MSG on crack" somehow made me cringe, but it's really THE best sauce ever, due to its mix of sweetness, saltiness, sourness, and umami. Typically, we don't use two types of soy sauce. Just one type is already enough, as it's what a Filipino family is usually capable of buying from the grocery.
And y'all think Uncle Roger is the greatest food critic on adobo? Wait till you hear us Filipinos react on this dish that we are very proud of. I don't even know why "spring onions on adobo" is even a thing, when we Filipinos don't even add that most of the time. Just soy sauce, vinegar, garlic, sometimes sugar, and choice of protein...that's already perfect. Also, using chopsticks on adobo? Yeah, eat your Pinoy adobo whichever way y'all want, but it's either spoon-and-fork or our very own hands. That's about it.
Apologies if I sounded too aggressive, but I and everyone from the Philippines is really going all-out on our adobo. To be fair, Guga's version looks really great, and I'm just happy to see the reactions of these three. Here's to more Filipino dishes to be featured on Guga's channels! 🎉
P.S.: That adobo sous-vide steak is quite interesting. I think no one even thought about doing it, but it turned out pretty great! That's a proof that the Filipino adobo sauce (different from the Latin American adobo) can be paired with almost every savory main ingredient...even plain rice.

Adobo steak sounds amazing, but i wonder how amazing it would be if you did the entire adobo process with some fatty short rib. Theres also a super simple and delicious side dish you can make with it, which is garlic rice. You just stirfry some leftover white rice with some vegetable oil, lightly toasted garlic, soy sauce, and msg. Definitely wanna see some more takes on adobo!

Filipino people don't use chopsticks on our adobo and rice, barehands is the way to go, or spoon and fork, but that version of pork adobo looks really rich and flavorful! we call that version "pa-iga/pa-tuyo" or dried/evaporated, because the sauce are almost dry or evaporated.

Good cook on the adobo. The whole peppercorn usually goes in during the marinade, but what you did was fine too... On a side note, we Filipinos don't use chopsticks unless eating at a Chinese, Japanese or Korean restaurant.
I’m afraid Leo isnt easily forgiven. The filipinos need a proper apology video, and the only acceptable gesture would be for Leo to cook Adobo egg fried rice garnished with adobo flakes.
The best thing I know that my mom cooked for the family was a beef adobo, which is a unicorn. And we don't use chopsticks. Spoon and fork combo is KING!
