I think we talked about this, but in case we didn't every city/municipalities/town typically has its own food truck vendor license/permit, and of course each license is a separate fee. So think about the top 2-3 cities/ municipalities/towns you think you want to operate the truck in and start with the permits/licenses for those regions. Build up the bank and then branch out and building on your initial 2-3. Also, often in Metro Regions some cities/towns/municipalities have reciprocity permit/license. Do some research to check your area. If so consider including them in your initial group, because that is like getting two permits/license for the price of one. Finally when you are ready to take the ServSafe Food Protection Manager Course and Test to get your Food Handler License (your license which is different than the truck license/permit) call me. I am certified instructor and exam proctor, so you can do it with me. I went through this process a year ago, we did a concession trailer instead of a truck just because of the cost savings and we wanted to get off the ground quickly.
