Ian please don't talk about steak. I as a Indian find it very difficult to know about steak
Some tips for cooking steak:
● Salt your steak (and meats in general) in advance. When you put salt on meat it pulls water to the outside of it. Ideally you want to wait for the water to reabsorb before you start cooking it as you don't want to lose the moisture on the inside. If you don't have time to do that then salt your steak right before you cook it.
● Pat your steak dry with a paper towel. I usually do this after salting it and before seasoning it. There will always be a bit of excess moisture on the outside of a steak, which will make it harder to get a good crust.
● Some cuts are thin enough to just cook on a pan. I think the general advice is to only use an oven if a steak is over 1 inch in thickness (of course you still need to cook it in a pan to get a crust).
● Get steak at a local butcher if possible. They usually have better cuts at a cheaper price.

can someone explain why the mortar switches to the turret even though the troop it was focusing is still alive? thank you
There's a small radius around the mortar where it won't target, so if a troop gets too close to it, the mortar locks on to the next thing that's in it's firing radius
