    They look great and easy to make. I have a wild and crazy question. Why pat dry, and place into the fridge, if you are ultimately dunking them in the batter before you toss them in the dry ingredients?

      Water makes breading fall off and also makes oil pop and explode. From experience, breading sticks better. Although there is a small water content in the batter, I have better luck drying.

    Do you think would be able to notice a difference in taste or texture if they were frozen for a week before frying?

      No doubt there is a difference in frozen vs fresh gulf shrimp. However, I have used frozen shrimp many times and they are still excellent with this recipe.

    May I ask, what's the purpose of cooking the shrimp with the tail on? Wouldn't it be much easier of there was no tail to deal with?

      I feel like 1 good creole seasoning mix would work versus all those individual spices, but that would make the video shorter. I don't get the purpose of the buttermilk in the wet batter. Eggs and hot sauce should suffice, yes? Would this benefit from the dry, then wet, then dry again batter application method?

    One look at the MASSIVE amount and diversity of the ingredients and video shut off. Its NOT necessary to use all that junk and all that time to make great fried shrimp!
