The IE 800's they dont require much power but if you clean up the audio and give the larger drivers a bit more power it will sound amazing. (Over power them and let them take what they need.) Fakes will just max out power no mater what. Hooked to a proper DACK you can break the coils and possibly blowout your ear drums.
Sennheiser purposely didn't send you the exact model because they knew the stuff you got from China was real and you wouldn't be able to tell the difference. The factory probably leaked the specs or even produced more for their own side hustle - this happens all the time.

I actually got unlucky with the IE800's. I got ones with a case that doesn't close properly and doens't have magnets and the buds sound very tinny and cheap. And on top of that our national post office charged me extra import costs which was not fun... :(
