    This is a great idea. You get a much better sear with the griddle. And also, it's a lot easier to clean the griddle than grill gates.

    nice work!!
    I have been doing the exact same thing on my gas grill with the exact same pizza skillet that i make pizza on in the winter... homemade crust.
    I grill my onions in butter before I put the burgers on.
    love your music great video and concept... cheaper than buying . these outrageous grills

      Ken Rogers Mostly Outdoors i understand that. I have one of those weber griddle inserts, bit its just not large enough for most everything so i rarely use it. Its just easier putting a cast iron pan on the grill which i then can move it it gets too hot. Like you can do with this. :)

    Would you recommend using this size griddle on a stovetop? I imagine it would be too large and interfere with the other burners. I'm looking for some cast iron that I can put four slices of bread on at the same time to replace my square teflon griddle. This seems simple but no manufacturer produces larger square cast iron pans anymore.

      This one probably would not work well on a stove top. I’m pretty sure that Lodge makes a square griddle that would be exactly what you want. Thanks for watching!

    You can do chick wings this way too. Coat them in butter and whatever seasonings you like, put some oil on your cast iron. Once your coals are good and hot put the cast iron above them, turn the wings every 10 minutes or so for about 35 minutes or so. Once they are brown and crispy, coat them in your favorite sauce and put them back on the cast iron for 5-10 minutes to bake that on.

      Cool... I haven't done wings on that little griddle. Since I bought my new griddle, that's what I use.

      That sounds good. I bet you could put them on the grill grates to give them a nice char and taste if wanted too. I’m going to try it

    And if you want a little more smoke flavor, put the patties on the indirect side just for a couple minutes, and then sear them on the griddle

    Hello. How long did it take for the griddle to heat up on the grate? I am interested in this technique, but unsure if regular briquettes can heat up cast iron skillet. Thanks for the video.

      mmmm... It's been awhile since I've done this cook, but I can almost assure you that I used regular Kingsford Blue charcoal. It did just fine. Thanks for watching!

      I just made onions on the Lodge 2 sided griddle last night. It worked great, but it took some time to heat up. Best if you pull the cover down. It helps with cooking. Just remember, cast iron holds the heat. A Blackstone is thin steel. It cools much faster. And even heats up faster. Cooking on cast iron is not like cooking on steel. If you cook on cast iron alot, you will know this....

    Me being a former line cook we never put ketchup on the burger we used the 🍅 the ketchup was optional if the customer wanted to put ketchup in there burger.

    Cast iron has its place but I'm wondering why you didn't cook the burgers over the charcoal. Would have been MUCH better.

      Oh now... there is nothing wrong with cooking over the charcoal, I do it often. However every once in awhile, its good to have a little extra flavor. Using this method, you can have both, charcoal flavor AND that awesome sear that you get from a cast iron skillet. It was the best of both worlds! Thanks for watching!

    never ever cook on the grill unless you have all things needed in abundance. scraping for that bargain basement mayo killed me.
