I actually know a youtuber who does exactly this. I'd definitely suggest you check out Nachoneko since that's probably exactly what you're looking for.
This looks very frustrating, honestly. She says a lot of these very clearly, and the recognition just says "Nope", and then on top of that, each line is read at very different speeds with very different accents. EDIT: Something basic like the "default" accents they used to teach, or the hard-to-notice Indiana accents, I think would have been perfect. I feel like this sets the person to speak in a very specific way and punishes them too much when they don't fit that.
You're not wrong, although I think she should really hover over the individual words more often. She does it sometimes if she's having trouble pronouncing that specific word, but she could also be using it to break up quick strings of words into smaller bits. This would probably make it a lot easier to deal with the ones that she feels are talking too fast. edit: Saw another clip of her doing exactly this. Sometimes lucky.
I love how she said O-raun-gey for the english way to say orange even though the japanese word is closer lol she is adorable it reminds me of korone saying pee-pe for pipe just becuase thats how it would sound if it was romaji rather than english
