This motor draws a lot of current and you need to use a large heatsink and a fan to cool the MOSFET because if the MOSFET gets too hot it will burn. Also, this circuit should not be used for a long time for this motor.
By changing the parts of the project, the circuit may not work properly. If you use a 100K potentiometer instead of a 10K it probably won't be a problem, but I don't recommend it.

Is anything else to get 100% output.
What's your power source? Battery or charger/adapter?
You can use whichever one you want, just make sure the voltage is 12v.

I don't think there is much difference in using LIN or LOG potentiometer in this circuit, but it is better to use linear potentiometer.

Motors often have high inrush current so you must derate the MosFet
