Sharpening hollow-ground chisel and plane blades with Garrett Hack
Sharpening chisel and plane blades by hand is a time-consuming process. A hollow grind on the bevel of the blade can significantly speed up the sharpening process. In addition, the bevelled edge is perfectly positioned against the waterstone so only the bevelled tip and cutting edge are treated, which prevents an unintentionally rounded edge.

How do you keep bringing the iron back to the exact same spot on the wheel after taking your hand off it? I am forever changing the bevel when I do this.

The angle of the bevel is difined by the angle of the fence, so it will not change.
