Hot & Cold Smoker Build - How to

  • I woke in the morning and decided to build a smoker box to smoke meat and other foods. I didn't have any plans but did a little research. I only used the materials that I could find on the homestead and only spent £3 on hinges.
    The handle and latch are from beaver gnawed wood found around the lake.

    Love the rustic look, particularly the beaver chewed door handle and latch!
    No beavers in Australia so the handle and latch will be driftwood. Thank you!

      Hey thanks for the comment. We you can learn, that's what I did. Most of my life I spent behind a desk so not had a lot of practice. Go for it :)

    My parents had a smoke house and they made it tall so when they hung the eels, they smoked slowly and the result was Great. But the smokers at our stores here in states are all same size as your box. Good job

    Nice box! I did a similar wood top on my table saw for fine cuts. Mounted wood and just raised the blade through it. Keeps the thin slivers from getting sucked in. I'm about to build one out of cedar and pine. Using tongue and grooved cedar planks to cold smoke cheese and salmon.

    Nice great job, the best meat smokers are those made of wood.
    In the past you only had custom wooden meat smokers.

    Thank you for the measurements. Is there any particular reason why your chimney was so long in the ground. Can that part any shorter than th 10 feet yours appears to be.

      Oh sorry the firebox is quite small about 45cm x 20 x 20. The pipe from that is simply so that naked flames are not going up into the box and have a small amount of room to slightly cool. The idea I picked up from looking at some drawings online. It’s not cold smoking by any means but it seems to work.

      You probably noticed I didn’t put an actual chimney on the box. Found the gap at the back enough to get a draw. It you may choose to put a small chimney on the box for greater draw.

    I really like how that smoker turned out! What is the first thing you are going to smoke?

      Probably some pork. We raised a pig last year to try and be a bit more self sufficient but without a smoker was difficult to make sandwich meat etc Am sure once get it working we will think of all sorts of things A whole chicken will be nice too. Lots of people tell me smoked garlic is nice. Do you have any suggestions?

    Thanks a lot and great video! What would your suggestion be for a door if you do not have the tools to round the edges of the wood like you did? Also, for someone to build with no woodwork experience.

      To be honest I have very little experience in woodwork, I’ve never made anything like that before. An easier way would be to use plywood. A router isn’t needed for finishing you can do that with a file and or sandpaper. Wood is very forgiving so go for it :)

      Called up my pal who’s a chippy and he said the same thing.
      I’m going to go and buy some untreated (??) timber to make a frame similar to yours and then just attach sheets of plywood for the walls as this will be much easier.

    after the 'greta sort out of 2019' are there other notable years in the life of the workshop? average or minor sort out s for example?

      It needs another great sort out 😂 it’s full of beekeeping stuff, an excessive amount, needs rewiring too.

    what temperature can i make inside until the wood gets affected? i what to coock the meat for 2-3 hours around 90 Celsius.

      Sorry missed this comment. Yeah I looked carefully into the temperature, mostly because of the glue. I’ve taken it up to 120 without any problems. I think in the other video on the smoker I showed some temp readings.

    wait, I think 140°C is pretty to much for hardwood (isn't it?). Secondly, is it safe to raise the temperature in glued parts?

      Hi, thanks for watching. I checked the glue before using however this was a one off, I now smoke at a lower temp, see video from last week on brining.

    Would it be okay to use like any wood glue?? or will it possibly let toxic fumes into the cold smoked fish

      I made a point to research the glue and how safe it was at max temperature etc.

      @@BalticHomesteaders Sorry I just kinda rushed thru the video to get design Ideas and all that.. Will be building 1 myself later today so just seeing how other people do it and what's the best way to seal it up so that smoke doesn't escape but only from the chimney on top

      No worries. You’ll see mine is an experimental ‘chimneyless’ design which works. I have no regrets about not putting a chimney on it, I was smoking just yesterday.

    I’m going to build a smokehouse, which would you suggest for venison, hot or cold smoking?

      Hi. Are you curing it first? It really depends what you’re planing to do with the meat rather than what meat it is. Remember it’s easier to use a hot smoker to cold smoke than the other way around so I’d say build a hot smoker and then but a cold smoker tray to use when you want to.

    Have you found the lack of venting a problem with smoking?

      Hi. Haven’t had a chance to try it yet as I got caught up with covid stuff and then winter struck. Should be setting it up soon as spring has just sprung. However there is a vent under the back of the lid. If I have to install a chimney then that’s no problem and easily done.

      Firstly what a beautifully put together smoker!! I'm soon to start my own smoke box project from euro pallets and I'm gathering data at the moment!!
      My question is in regards to ventilation! I plan on using a hot plate in my smoker and it's a basic electric smoker ..how much ventilation would I need ??

      Well for hot smoking there will be a firebox and chimney down slope, hopefully I’ll be building that in the next couple of weeks. For cold smoking I’ve got this wire tray that you put wood saw dust in and it burns slowly like a cigarette. You should be able to find on Amazon.
