I think both zoans should be Hito Hito no Mi, since Human-like beings are under that category. Also, every Zoan fruit has a Soul, and the already existing Soul fruit is a Paramecia, so it wouldn't make sense, Same with the Hollow Fruit. Like, Gods are a part of the Hito Zoan subclass, and Shinigami means Death *GOD*, so I think it would be the Hito Hito no Mi Model: Shinigami

id imagine instead that ichigo would have hito hito no mi: model shingami, and his race would be what signifies the connection of hollow and quincy, and id prob choose lunarian, its the best race in one piece and it shows abilities on his most substantial enemies, being ulquiorra as where he initally showed arrancar forms, through his now black wings, and literally any quincy hes fought due to fire manipulation, its the closest thing outside of haki that could be comprabble to quincy reishi control
