    brioche dough:
    230 ml warm milk
    7 g instant yeast
    1 tsp sugar
    360 g all purpose flour
    50 g sugar
    3/4 tsp salt
    2 egg yolks
    6 tbsp softened butter
    In bowl combine warm milk, yeast and one teaspoon of sugar. Leave the mixture to rest for 10 minutes or when the yeast has activated. (foam at the top)
    To that add flour, egg yolks and mix until combined. Knead the dough for 10 minutes.
    Start adding in the softened butter and knead until all of the butter has incorporated in to the dough. The should be smooth and not be sticky at all. Place into a floured bowl and let it rest for 1 hour.
    cream cheese filling:
    200 g cream cheese
    3 tbsp sugar
    lemon curd:
    4 egg yolks
    100 g sugar
    1 tbsp lemon zest
    80 ml lemon juice
    80 g butter
