  • Video clips of a roti vendor at the Luang Prabang Night Market, capturing some of the roti dough flipping/forming technique in slow motion. From the video, it looks like the griddle frying uses both oil and margarine. Whereas the Malaysians and Singaporeans prefer their ‘roti canai’ savory with a curry dipping sauce as an appetizer, the Thais and Laotians prefer their roti as a sweet dessert, either plain with sweetened condensed milk and sugar, or with sliced banana & Nutella with a drizzle of sweetened condensed milk. The savory version with a side of grilled satay skewers is my favorite but I’ve learned to also love the sweet version after trips to Thailand & Laos.
