Hey I’m learning this too, from Cristoph Seileki 1.d4 course. In this line, instead of castling, he recommends c4, nc3 and qb3 lines where black usually plays qb6 and you play a queenless middle game. Not castling means your king may be more active in such a middle game

Experimenting in these games is surely a good idea. I've heard professional coaches, John Watson for example, say playing a broad range of openings is good for your improvement and general understanding. It's also a reason to play some blitz, to get more experience. Magnus Carlsen no less thinks blitz is good for your classical game.
yesss, finally you're using the opening I recommended to you, i think you'll have great success with it, fits your style imo (also my style). Also a great way to train better or slightly better endgames, you'll be surprised on how many opponents just completely crumbles on the unconfortable endgames that emerges from the catalan. The most dangerous response, imo, is the dutch/stone wall approach, engine hates for black but it's not so easy to handle.
Tempting to only play these setups. A downside I can think of is you miss out some thematic instructive pawn structures. And also thematic attacking patterns like the Greek Gift because our bishop is never on d3.
Interesting setup, it's a pity your opponent blundered early, because we didn't get to see thematic strategies and plans. Although I would've played 3...c5 and I think black can be happy with that?
