That is definitely a perfect environment for mold. As far as the roof structure as you mentioned it’s probably vonuable to thunderstorms with high winds
I feel for these people as I had a similar issue I battled in my own attic in Connecticut. Had to remove all old insulation, air seal penetrations, top plates, etc. and then seal off the gable vents. I had gable and ridge which I believe was short circuiting airflow. After that had to have all new decking and new roof.

I read you can’t have gable venting and both soffit and ridge venting together. Gable venting needs to be capped
