    During the early 80s, I was like 4 years old. Staying in Taman Jurong, my dad drove us back from somewhere and down stairs of our block was having Malay Wedding. The host distributed eggs in decorate little handmade baskets of sparkle ribbons. They saw my dad drove into the carpark and came smiling and gave us 2 baskets of eggs. Dad congratulate them and have a short chats with them in Malay. My siblings and I were really happy and we enjoyed the boiled eggs. Our Malay neighbours(the blocks around our block) were all very friendly and would invite us to wedding if they were hosting. Back then Kampung spirits still exist. Regardless Chinese, Malay, indians, Eurasian...etc. The parents always help each others out among the blocks and next doors and the children always played together at each other's house... The neighbourhood were really close as everyone just simply know each other.
    We were staying in 1 and 2 room flats. Teens or adults always carry a basket of foods such as packs of Nasi Lemaks, curry puffs, poh piahs, Goreng Pisang from door to door to sell them and we will always buy from them whenever we could and my dad would cook his Kaya recipe and sell from door to door during his off days. Foods back then were really nice...The small packs of Nasi Lemak cooked with Ginger and coconut super nice. That recipe sadly don't exist in today... The last time I stumbled upon that recipe of Nasi Lemak was in the late 90s in a Pasar Malam, ultra fragrant yellow coconut rice with sedap chili and Malay wedding style fried turmeric chicken. Since then, I have never meet that recipe.....

    I thought I would watch it on double-speed, but, no watched it at normal speed and found it absolutely fascinating!
    And hats off to that baker too, working out of a domestic kitchen, but only until his kids come home, and then the apartment is kept quiet for the kids to study. Singaporeans really do value education.
    21 hours of hard labour, lots of bending and heavy lifting. Congratulations, Derek! 💐👏🏻

    This is very well done. The history of the wedding culture in kampong. I was in primary school and living in Ponggol. I remember the pretty decoration, the pineapple they use to poke those colorful sticks. The drums. Seeing the wedding and the families, very heart warming. A+ for production. Good for you as MasterChef. :-) Way to GO!

    Growing up in Singapore, I always enjoyed watching the preparations for Malay weddings.
    They're put in a lot of time and passion to serve the most delicious and colourful dishes.
    The indians and the Chinese weddings are exquisite feast.
    Now living in the west, i can't believe the standard of wedding meals.
    It's a starter of vol au vents with
    chicken and mushrooms.mains 1 miserable slice of roast beef, loads of roast potatoes and gravy.
    Finnished off with dessert, cheese cake.
    Loads of wine to make you giddy.
    Nothing can compare to Asian wedding feasts , it's Class Act.
    Well done to Nazeen and company.
    Derek, being a winner of master chef, where is your hygiene hat?

    I can't imagine how tired Derek must feel to cook AND rewang after. Brings me back to my secondary school days where I worked rewang for $50 and I felt so tired after. But hey, at least there's free food and can bring home the leftovers after :) Well done Derek!

    Yogurt Marinated meat brought to half cooked with spices, and layered with half cooked Cinnamon and Saffron Flavoured Rice, 30 min warm heat is enough to bring in the Biryani, topped with fried onions and Herbs and sprinkled with butter, mix it up well and then serve it on the plate with little Dry Fruits and Nuts.

    Whenever we go to Singapore, we always go to the Muslim centres for briyani. I know, as a South African, what it entails to make a successful briyani.

    When you cook for so many people, you have to have a system. A system that you have tried and tested and you must have a knowledge of the ratios eg rice to meat or spices. It is very easy for your spices to get lost when you cook for a lot of people.

To reduce risks of management losing profits (thus management reduced their charity donations), why not use a factory grade XXL digital weighing scale that can weigh heavy items? Add container on weighing scale, zero weighing scale, and add anything you want to achieve the correct weight. Here is the unique selling point for the movie: Creatively, the protagonist use a luggage handheld portable weighing scale with twine or ropes to tie to 4 corners of the container, to measure the weight of the container, then measure the weight of the container plus the food ingredients, then deduct the weight of the container to get the weight of the food ingredient. Do in multiple small batches due to the limitations of the luggage scale and human weightlifting abilities.

    4:45 Why not use Tesla robot arms tech to quickly pincer clamp grab and lightning saw (vertical machine saw) pork from larger parts into smaller parts to max profits? This will reduce the risk of workplace injuries (saw off fingers) and cut labour costs significantly. Most importantly, it markedly reduce the risks of transmission of diseases (pandemic) from human meat processing workers to the meat (product).

    Billion dollar global insight - 4:50 instead of cloth based soft gloves that trap germs and reduced productivity as workers have to work slower and more careful to avoid slicing their fingers off at the vertical machine saw (when passing through raw meat), equip each worker with medieval style lightweight metal (stainless steel) mesh gloves? This will increase speed and output for each worker and reduce labour costs. Noteworthy is the reduce risks of medical compensation payout and costs to insurance companies on their financial disbursement to disabled workers. Which male will marry a fingerless woman who is poor?
