    super excited to share my Mum's amazing mamoul recipe. If you don't know me, I love recreating recipes and techniques, to get them done as fast as possible, of course with the same or better quality results! time is precious right?!
    The original mamoul dough is to soak the semolina in butter or ghee, overnight! Not for me, thank you.. I throw everything in and go! I use vegan butter here, as it's softer and healthier!
    Taste and texture of these cookies are incredible, so I decided to share it with you guys and save you some time! I would also love to introduce you to my pressing shaper! I do have the original molds, but this way, it's thinner and the filling is evenly spread, rather than a full center, and barely any filling on the sides.
    Mamoul dough
    4 cups fine semolina
    2 cups coarse semolina
    2 cups (450g) vegan butter
    1/2 cup rose water
    1/2 cup blossom water
    1 teaspoon baking powder
    1 teaspoon yeast
    1 teaspoon mahlepi spice
    1 teaspoon mamoul spice
    2 tablespoons warm water
    *fill with dates or nuts

    كوب سميد ناعم
    ٢ كوب سميد خشن
    ٢ كوب (٤٥٠غ) زبدة نباتي
    نصف كوب ماء ورد
    نصف كوب ماء زهر
    ١ ملعقة صغيرة باكنغ باودر
    ١ ملعقة صغيرة خميرة
    ١ ملعقة صغيرة محلب
    ١ ملعقة صغيرة بهار كعك
    ٢ ملعقة كبيرة ماء دافئ
    * الحشوة حسب الرغبة، تمر او مكسرات
