How to make perfect dhindo (dhido) ढिँडो in Nepali style

- Dhindo (ढिँडो ) is a traditional food of Nepal.
Made by boiling hot water and continuously mixing and stirring corn flour or other grains like buckwheat, millet flour.
Method of making Dhindo:
I made just for two people
Ingredients:
water 900 ml
210 g wheat flour and millet flour 50/50
30 ml butter
Method: Heat the pan and add butter, then Boil the water, Slowly add the flour to the water, while stirring constantly with a cooking spoon. keep stirring the mixture constantly for 7-8 minutes. If the color of the mixture changes to brown we can be sure that the Dhindo is cooked.

This is very interesting because we eat this food back in some part of Africa. We mix millet flour with corn flour or cassava/yuka flour.
Nshima from Zambia made with cornmeal is also so similar.

Something called Ragi Mudde is made in Karnataka (Bharat) in exactly the same way using Ragi flour. Rajasthan makes it with millet flour & Italy makes it with corn meal & is called polenta
It is made ragi flour in nepal too . we call it “kodo “flour in nepal. . He have mixed wheat flour as well so it seems white . But traditionally it is made with Kodo flour or Ragi flour. Similar dish. ☺️

We mostly do it with buck wheat or white corn flour or paspalum
