My family LOVED this and I think it tasted better heated up the next day. The sour cream took on kind of a cottage cheese flavor. The kids loved the crispy noodles on top
OMG, you two are so cute. I love your family and vibe. One tip, if you put paper towels in a strainer, and drain the ground beef for a few minutes before using it, you can use 70/30 or 90/10 ground beef and have the same results. The fat content doesn't matter if you are mashing the beef, it's really only important for things like burger patties and meatloaf.
We did it this way too and did it was red mild enchilada sauce which is so good. Both casserole form and rolled up form are so yummy. The black beans in it is so good and barely recognizable. You could switch black beans for pinto bean, or another type of bean.
On beans put on half. On sauce if feel it's too hot in bowl add sauce and sour cream , mix well and than use. Like half my house likes nuts in browine. So I do family size and put nuts in half only. My son and I will make pizza and he will do half one way and I do half another way. We do this with food all the time. You get both worlds. Food looked good and y'all are fun to watch. This looks good. I think I would add sour cream to the layers. We are not big fans of black beans love pinto beans I so I would use pinto beans you could also add sliced olives. The best thin about casseroles is that you can make it to meat your family’s tastes.

That looked good, I would add taco seasoning to the hamburger and I serve it with chopped lettuce, onion, diced tomatoes and sour cream black olives to the top after it comes out oven to add to on your plate.
Was so good but I’d definitely recommend adding more of the enchilada sauce between layers otherwise it will be too dry and the tortillas won’t get soft. Such an easy recipe and quick . I just added sour cream on top of my piece .

Yum sista girl ya done good. I almost always brown my ground beef up and freeze it. I also do it with ground chicken, turkey, pork and sausage and freeze them up. So helpful

i always call this mexican lasagna when i make it.. lol... i interchange red and green enchilada sauce, or even salsa sometimes... love it!
