recipes!
congee:
500ml of brown rice
500ml of red lentils
4.5 litres of water
boil for 2-4 hours
whole foods granola:
250 ml / 1 cup dates, soaked
100 ml / ½ cup tahini
date soaking water
750 ml / 3 cups oats
250 ml / 1 cup mixed nuts (i used cashews, almonds, and hazelnuts), very roughly chopped
100 ml / ½ cup prunes, chopped
100 ml / ½ cup organic raisins
100 ml / ½ cup sunflower seeds
50 ml / ¼ shredded coconut
½ tsp cinnamon
a pinch of cardamom (optional)
- preheat the oven to 150°C / 300°F.
- add dates, tahini (and date soaking water if needed) to a food processor or blender until smooth.
- add all the dry ingredients in a very large bowl and toss. mix in the tahini date paste until all dry ingredients are coated.
- spread the granola evenly on parchment paper. press with the flat of your hand to make it denser.
- bake the granola for 25-30 minutes, until golden brown and deliciously nutty cinnamon smelling.
- let cool, and break apart to desired chunk sizes. keep in an airtight container.
tea mix:
125 g sencha
1 tsp matcha
shake
noodle soup:
1 tsp bouillon powder per person
½ cup of water
¼ head of broccoli
1 cup of spinach
100g tofu
bell pepper
red onion
roodles
spice mix:
2 parts nutritional yeast
1 part smoked salt
garlic granules (optional)

Don't laugh. Here's my go-to that I NEVER tire eating. I LOVE to cook a batch of (dried & peeled) fava beans along w/ potatoes in my Instant Pot. (1 cup dried beans, 300g potatoes, and 3 cups water.) When done, mash them! The beans turn the mashed potatoes a beautiful yellow hinge. Top it in a bowl w/sautéd kale, sliced raw red onions, and a drizzle of balsamic glaze. I never tire of it!

My lunch I bring to work which is shoving white miso, shredded carrots and pepper, a piece of nori, silken tofu and soy sauce and sesame oil in a jar and then adding hot water! I can’t believe how delicious it is everyday:)
The granola is back! I used to make this recipe so much in 2016/2017, your original youtube video is gone but thankfully the website post is still up, I had forgotten about it and need to make it again asap!
Currently my staple dish is tofu, rice, green beans or broccoli and the most delicious peanut butter sauce that basically has the trinity of condiments with the hot sauce being gochujang, it's amazing!
I remember your pan fried tofu video from waaaaaay back in the day - I still make my tofu this way when I’m not too lazy and just throw it in the air fryer. Your vids were SO helpful when I first turned vegan in 2016. 💚
My food I can eat every day is oats/porridge. Savory or sweet, warm or cold - doesn’t matter. Also tofu, collard greens, green beans, potatoes, and hot sauce! All day every day.
I do a tofu scramble in the morning with the spice blend of (nutritional yeast, garlic powder, onion powder, Kala Namak, Thai Spice and Tumeric) , spinach. Then I top with sauerkraut and a little brown mustard. Delish!

My staple is home cooked Mexican bean stew. My grandma and mom always made this for us growing up so as an adult I make it all the time. Especially in college, I would make a bunch of it in my instapot every week, freeze some and eat it throughout the week. I just don’t get sick of it. And since I was taught to soak the beans overnight and then rinse before cooking they don’t cause any digestive troubles for me. It’s very versatile too, you can eat it as is (YUM!) or add it to soooooo many dishes. I often mix it with rice to change the texture, which is also great for meal prepping your own little burritos to freeze which I also did a lot in college. You can also blend the stew to make like a creamy refried beans texture that’s great as a dip or to make dishes like “molletes” (yum yum yum!)

I'm vegan too! and honestly a good korma curry with lots of tofu plus a side of naan, as well as any asian style stirfy that has lots of veggies noodles and a sticky sweet sour sauce I could easily have every day.
My all time comfort foods are mushroom risotto (with porcini mushrooms, I always keep some dried at home and a little bit goes a looong way) and spicy sticky tofu with coconut rice and broccoli. I could eat these every day (and I cook them almost every week) 🌸

I expected oats to be on here 😄 My daily craving are oats with some kind of seeds, oat milk, nut butter and fruit!
You should try making indian kitchari! It's quite similar to congee, except it's made with split mung beans and rice. You add tempered curry leaves, cumin seeds, ginger, dried red chili, and turmeric as the spice. I sometimes add indian garlic pickle as a little funky spiciness for extra flavor! :) it takes like 20 min to put together if you have an instant pot :)

Jenny, this congee recipe has changed my life. I saw it in your first video and tried it out (we cook it in our Instant Pot so it takes about half an hour) and now I’m eating it most days! We use kala namak salt and liquid smoke and garlic powder in the stock. Today I added kombu to the mix as well. I can’t thank you enough, you’ve changed my eating habits for the better.

I love popcorn with a ton of nooch, salt and onion powder instead of garlic powder. Mmmmmmm.
My top everyday staple 5 foods (ingredients) would have to be:
1 Peanut butter
2 Bananas
3 Japanese Sweet potatoes
4 Tempeh
5 Oats
Just made the noodle bowl last night & omg it was so good! Just with whatever veggies we had (streamed some collards, kale & carrots & added chopped purple cabbage & sesame seeds on top), made with soba noodles & the veggie bouillon. That was all delicious, but the best part was using your "holy trinity" of condiments on top- soy sauce, rice vinegar & hot sauce (Sriracha), and that was incredible! So good! That's such a great flavor combination, who knew? We had those ingredients, I'd just never used them like that, especially the rice vinegar. It was so good! New favorite way to dress food, lol. At least in noodle bowls, so good. 😋 🤤 😃🎉
Forgot- also added the lightly fried tofu- YUM

Where do you buy your tea from? You could make a whole video on tea and, while maybe niche, I'd watch the hell out of it haha. I love mei leaf and white2tea. I think mei leaf actually sell a matcha dusted genmaicha that is so savoury and delicious :)

yeah!!! more food videos for sure:) I have the same cravings, mostly, but I love avocado with black salt on a veggie heavy toasted Ezequiel bread (I live in the US) for breakfast. I'm savory all the way and the whole grain/legume/fresh and fermented veggies are my go to. With Japanese sweet potatoes and sesame seeds on everything! Tofu and hummus (always homemade) are 2 food groups themselves...🤣🤣🤣

Yes, more food videos. The main breakfast and snack food right now is watermelon (summer in Florida) and an un-tuna sandwich main with garbanzos for lunch always everyday!
Yes! I want the sweet version of this. I know the granola is sweet but you always prepare the most beautiful dishes with fruit and that video would be so good as well! :)

Not a recipe, but man I could eat vegemite on toast everyday and never get sick of it. 35 hour stone-baked multigrain sourdough toast, nuttelex vegan butter, and a medium to light amount of vegemite, some hemp seeds on top. Everyday, man. Forever.

Loved the video, reminded me of when you had a pixie cut and made lots of recipe videos! Seeing you enjoying your tea infusion made me think you may love argentinian "Mate". It's a herbal drink. I think you should try it. If not sweetened, it's quite bitter and earthy, but in a very nice way.
I love Nutritional yeast. My vegan fiance introduced me to that when we met, and boy am I glad he did.
My favourite (comfort) food is vegan caecarsallad. The thing that makes it so good is the sauce wich is made out of nootch (nutritional yeast), lemon juice from one lemon, vegan mayo, salt and pepper. I'm quite picky with eating the same thing several days on a row, but this I could eat for dinner every day and never get tired of. It's our go to when I have had a rough day and don't feel like eating anything. But ceasarsalad with that sauce always saves dinner.

slow cooked vegan chilli is something I could eat a few times a week....lentils, chilli, beans and veggies. served with cabbage and rice, lime, coriander, salsa and avo.
I agreed with noodle soup, she never gets old 😛👍🏻🤗
Omg Jenny I agree so much, overcooked veggies are a crime against humanity. I believed I hated broccoli and cauliflower for so long. But it's just that my mum likes to cooks them until you can puree them with your fork.
