Maybe they've stopped carrying them. But, you can also find a large assortment of different sizes on amazon (amzn.to/2VMgQrK). They're cheaper, too. :)
I had a book like this in high school for my tech drawing text book,. If you wanted to make this thicker is it just a matter of replacing the Screw Posts with longer ones?
Thanks, Laura :) The interleaving is just tracing paper. It's lightweight, cheap and easily available (Joann Fabric, Michaels Crafts, Target, Walmart, etc.)

They also make screw post extensions that you can just add to the existing screw posts.
