筊白筍剛採回來，可以趁新鮮煮熟&蒸熟，保持筊白筍的嫩度，再放進保鮮盒冷藏，這樣子可以吃很久。
★筊白筍做冷菜，沾沙拉醬/千島醬或是白芝麻醬都很好吃。
筊白(台灣稱美人腿.筊白筍)種植地區為山城:埔里..居多.因為~埔里~自然湧泉及山區水質好.
所以產生病蟲害(黑點菌斑)較少...也無須打過多藥物.每叢筊白筍.水約深膝蓋至腰部.採收作業時須穿青蛙裝....採收大約落在清明後至中秋節前後都可以進行採收
這幾年產區運用科技照明燈 (代替白天太陽光合作用)調節產能及生產時間錯開..所以現在一年四季台灣都有生產^^
