    In my country, we allow the fish to air dry after the brine bath. Smaller fish like herrings are sun dried for about two hours before they are fried. We do this so as to get the crispy skin.

    The best!! The brine results were incredible. 🔥🔥✌🏾Curious though... Does the inclusion of sugar in the brine give the fish some sweetness or does it blend with the salt to give it a spicy rehydrated salt flavor 🙈? 💓💓...

      The inclusion of sugar balances the saltiness and enhances the flavours of the spices. The taste of the fish doesn’t have the sweet taste because of the inclusion of salt. The fish does taste better. The sugar will also help with browning of the fish when grilled or fried.
