    French cuisine created by Chef Tadataka Toeda, who represented Japan in the Bocuse d'Or, a global culinary competition known as the Olympics of the culinary world, in 2021. He fell in love with Nagano's ingredients and their creators, and in the 10 years since he opened his restaurant in Karuizawa, more than 90% of the ingredients he uses come from Nagano. He studied under Régis Marcon, aka 'the mushroom wizard', and expresses the charm of Nagano with French culinary techniques, such as using a soup stock made from local nozawana vegetables, in addition to a mushroom-based fond that he learned directly from Marcon. The chef alone prepares all the dishes, and the service is handled by his spouse who is also a sommelier. The restaurant also offers a wide range of Nagano wines personally selected by the chef after visiting the wineries.
