  • Mini BBQ Cheddar Meatloaves are not your Mother's meatloaf (sorry Mom!) These individual-sized meatloaves are full of gooey cheese, caramelized onions, and sticky-sweet BBQ sauce. This delicious and easy ground beef dinner recipe will be a hit with both kids and adults alike. Mini meatloaves also freeze beautifully.     INGREDIENTS:
    1 large sweet onion
    1 Tablespoon butter
    salt and pepper
    1lb lean ground beef
    1 egg, whisked
    1 Tablespoon Worcestershire sauce
    1/4 cup + 2 Tablespoons BBQ sauce, divided
    1/4 cup panko bread crumbs (gluten free if needed)
    2oz cheddar cheese, cut into 1/4" cubes
    DIRECTIONS:
    1. Cut the onion in half then each half into thin slices. Melt butter in a large skillet or heavy-bottomed pot over medium heat then add onions and a dash of salt. Saute, stirring every couple of minutes, until onions are golden brown and caramelized, about 20 minutes. Turn heat down if onions start to burn. Set caramelized onions aside to cool slightly - can be made up to 2 days ahead of time.
    2. Preheat oven to 425 degrees then line a baking sheet with foil and spray with nonstick spray. Set aside.
    3. To a large mixing bowl add ground beef, whisked egg, Worcestershire sauce, 2 Tablespoons BBQ sauce, bread crumbs, salt, pepper, cheese cubes, and caramelized onions, then mix until just combined. Divide mixture into 4 equal-sized portions then form each portion into a mini loaf and place on prepared baking sheet. Brush 1 Tablespoon BBQ sauce over each loaf then bake for 20 minutes, or until cooked through, and then serve.
