  • Texas Style BBQ Ribs | Smoked Pork Ribs

    With these smoked ribs, I decided to take some pork spare ribs and smoke them Texas style. These Texas style ribs just get a dose of salt and pepper, then smoked and basted with a mixture of water and apple cider vinegar.
    These Texas style pork ribs are simple and so juicy and delicious. You can serve these smoked ribs with sauce on the side, but I like to eat them just the way they are - throw in some Killer Hogs Hot Pickles and you are ready to go.
    Here is the recipe for my Texas Style Ribs recipe.
    Ingredients for Texas Style Ribs :
    - 2 slabs St. Louis Spare Ribs
    - ½ cup Coarse Ground Black Pepper
    - ¼ cup Kosher Salt
    - 1 cup Water
    - ½ cup Apple Cider Vinegar
    Directions for Texas Style Ribs
    - Prepare Smoker for indirect cooking at 275⁰.
    - Remove ribs from packaging, trim excess fat and remove membrane from bone side.
    - Combine Salt and Black Pepper in a bowl and pour into a shaker bottle.
    - Season ribs liberally on both sides with salt/pepper mixture.
    - Place ribs on smoker and add pecan wood chunks to the fire for smoke.
    - Mix Water and Apple Cider Vinegar in a spray bottle.
    - Spritz ribs every 45 minutes.
    - After 2.5 hours remove ribs from smoker, spritz with vinegar mixture and wrap in aluminum foil.
    - Return ribs to smoker and continue to cook for approximately 2 hours. (Check ribs for doneness after 1 hour and every 15 minutes after. Once desired tenderness is reached pull of smoker)
    - Rest ribs for 15 minutes and serve.

    I just tried this tonight. Been smoking pork ribs for years. Never got the tenderness I wanted. This was perfect. Fall off the bone literally. Can’t wait to do it again

    Traditional Central TX BBQ is salt and pepper and no sauce. It can from the German and Czech immigrants and that's all they had back then. Many places now add garlic powder. In East TX, they add more spices like paprika. South TX will add cayenne or chili or both. I use salt, pepper, garlic, brown sugar, and cayenne. The key is that it's dry rub.

    Great video Malcom. I started smoking about a year ago, all of my recipes come from you and they have all tasted great! My only problem is while the ribs are fantastic tasting, they are too tender and always fall of the bone...however, I never let them rest after I pull them off the smoker. I just dig right into them. In this video you explained that in letting them rest, they will firm up some. I'll try that this weekend. Thanks for the tip my man. Money Honey!

    Malcolm, going to do it today in my Bradley Smoker. I have to cut 7" off each end to get them to fit on the shelves, I'll use 3 shelves and rotate when I spritz.

    Good solid work. Out in East TX we kind throw a mix of pepper, paprika salt and whatever else sounds good. Pepper heavy for sure. Pecan wood is typical, post oak works great too. A thin coat of TX bbq sauce on top for the last 30 min as the smoker cools down. Everybody does it different, as long as it tastes good!

    love the videos. I noticed that dependent on the style of ribs you're cooking, the temperature that you smoke at changes (e.g. one recipe at 235, and another at 275). Can you elaborate on what determines your smoking temperature?
