I don't have a smoker and don't feel like converting my gas grill into a smoker, can this be done in the oven,.... because that is what I am going to do and may cheat by coating the chicken before I wrap it with a light coating of my BBQ seasoning and a touch of liquid smoke to see how this comes out. @@TheBarbecueLab the bacon wrapped chicken bites came out perfect. I was making some sopapilla cheesecake and had some cinnamon sugar leftover, well actually apple pie spice sugar so I sprinkled it over the bacon on one side, and the brown sugar on the other. I use a small amount of the Liquid Smoke and Emeril rib rub to lightly coat the chicken before wrapping it in bacon. Baked at 350 degrees for about 35 to 40 minutes and it was fantastic.
