Croissants will always have a special place in my heart. A good quality croissant is one of the most delicious things you can eat in my opinion. It's such a laborious pastry to make though.

I don’t think people realize how impressive it is to recognize the exact ratio of ingredients required for the perfect croissant (or any baked good). He was working from a seemingly random amount of flour and then chose the correct ratios of the other ingredients from there.

He has a laminator. Laminating the dough by hand is the hardest part, so yes, letting a machine do this complicated part, the rest is easy indeed.
