I followed the same crackling preparation as we normally would, if you'd like to see a video showing the preparation, check this video out: • How to Make Crispy Por...
This cook was a bit different, had to improvise along the way, however the end result was a tasty, juicy, tender and crispy skinned pork belly.

Honey Soy Rub🔥🔥 Great Vid mate! & the crackling looked & sounded delicious! Not an easy thing to do in an offset
I do 20-25mins max heat fan-forced in the oven to get the skin going, low and slow smoke for 2hrs or so exposed all sides, 2-3hrs smoked in the boat, then a final 10min oven grill
The amount of confidence I have got from watching your videos... Was scared to try brisket till I seen your videos ☺️ any links on where to buy your rubs ?
Thanks legend. Links in description but the new rub is a few weeks away
We do a similar thing with the chicken stock but add milk instead. Also chuck a bay leaf 🍃 and a few herbs. Comes out tender as.
Very nice!
You can use the roasting rack upside-down
Awesome. What would be the approx weight on the meat ? Going to try this weekend 🤤
Nice work Aaron. I’ve seen a pork belly done as a slow cook then used a frypan and oil to create a crackling at the end. They needed to weigh it down to keep the skin flat, but seem to work well.
Cheers mate will have to try it

Check the Dalstrong site out :)
@@LownSlowBasics will do.... Cheers mate.
😉
What temp do u run to set the crackling
Around 500f/260c
Is the new rub available yet?
Sorry not for a few weeks. Had a slight delay
10-15 minutes for your Charcoal to be ready.. mine always takes 30-45 minutes
Different brands and chimneys work different
Decent, but why no saumurage at the beginning ?
Im experimenting today. Ive got baby backs with skin on. Im going to smoke the shit out of it then crackle up in the oven at the end of the cook.
