  • In this video i'm going to show you how to make crispy smoked pork belly in an offset smoker.

    This cook was a bit different, had to improvise along the way, however the end result was a tasty, juicy, tender and crispy skinned pork belly.

    I do 20-25mins max heat fan-forced in the oven to get the skin going, low and slow smoke for 2hrs or so exposed all sides, 2-3hrs smoked in the boat, then a final 10min oven grill

    We do a similar thing with the chicken stock but add milk instead. Also chuck a bay leaf 🍃 and a few herbs. Comes out tender as.

    Nice work Aaron. I’ve seen a pork belly done as a slow cook then used a frypan and oil to create a crackling at the end. They needed to weigh it down to keep the skin flat, but seem to work well.

    10-15 minutes for your Charcoal to be ready.. mine always takes 30-45 minutes

    Im experimenting today. Ive got baby backs with skin on. Im going to smoke the shit out of it then crackle up in the oven at the end of the cook.
