I don't understand how a mesh circle would be good for sour dough starter--the mesh looks like the openings would allow a fruit fly or tiny bug access to the starter. I was wondering about making an elastic cover from waxed cotton so it could be used to help reduce drying out in the fridge.

The mesh one is not for sourdough. I would do the yellow one for sourdough
