I found your channel about a month ago and have been watching nonstop ever since. My dad passed away unexpectedly in October and loved Julia Child. My best memories are cooking in the kitchen with him my entire life. He instilled a love of good food, a diverse pallet and adoration for cooking. You re-lit a desire in me to carry on his legacy and get back in the kitchen. Through laughter and tears I’m cooking again with my kids. There is a reason everyone loves to watch the bloopers cause it humanizes us all. Thank you for being daring, adventurous, and not afraid of failure. Important life lessons and a great cooking channel. You've inspired me. I have for many years had the Julia Childs cookbooks but there is something tedious and uncertain about opening a recipe without the pictures and titles in French. Much deserved success and thank you for showing us what went wrong so I don't have to make those mistakes as I won't be one to keep making something until I succeed.
We eat artichokes all the time...whole, almost. This is a very Sicilian way. Pound your artichokes holding the heart in your palm, on a counter till they give and open up. Peel the outer leaves and clean the stem but leave it on, peel it a bit. You can cut the tops slightly if you want, we don't. Wash by soaking in salted water with the juice of a half lemon. They oxidize. You need a saucepan that is big enough to stand your artichokes in and cover them with a lid. Prepare a stuffing, breadcrumbs, parsley, parmesan cheese, some mince garlic if you like, salt, pepper. Salt your artichokes inside and stuff with a few tablespoons of filling depending how large they are. Fill the saucepan with water so the hearts are submerged but not the whole thing. Crack a couple of garlic and put in the water with a bit of salt and a drizzle of olive oil. Stand up your artichokes so they all fit in....you can put them in before the water and seasoning if easier, which it is. Drizzle oil on the stuffed artichokes, bring water to a boil, cover and reduce heat to simmer for 20 or 30 minutes or until a leaf can be pulled easily. I can eat a lot of them, delicious cold too....when you get to the choke, if properly cooked can be pulled by your fingers or knife or spoon, don't eat that, we peel the leaves and place half the leaf and pull the bottom bit off. Fun to eat. An excuse to eat with your fingers. Hope you try it. I really enjoy your vds. I love Julia too, her onion soup...lengthy but delicious
The hamburger and stuffed mushroom was how we discovered you. After making those my husband asked “what else has he made? Those were delicious!” Quickly followed by the chicken supremes and glazed carrots for my father-in-law …another winner.

I wish you'd do any of the jelly roll recipes again using Preppy Kitchens technique. I'm not a pastry chef. I'm barely adequate, but I managed to do his rolled Christmas log cake without it turning into tantrums and tears. (Just made the cake, didn't do the log decorations). Frankly, the whole reason I have watched so many of your videos is you show the mistakes. No one can cook so many meals without making mistakes. I enjoy watching how you get frustrated, and push through anyways, and recover as best as you can, even if its do it all over again. Your early videos helped me remember how much I used to not know early in my life, and I learned about all the techniques from watching cooking shows. So your learning experience kind of mirrors mine, mistakes and all. So keep it up for as long as you can. I hope you never burn out.

I'm still sad about the squab, which is one of my favorite birds. The aspic is also too bad. I love aspic and I've made it for people unfamiliar with it, and they loved it. The trick is to keep the gelatin light, get it from the simmered stock and not from a little packet, make sure it's perfectly flavored, and use a filling that tastes good chilled. I usually choose foie gras, which is excellent chilled. Plain cold liver just won't work. Regardless of it all, you're still an inspiration. Happy New Year!

Jamie, you had me at Orange Cake. It _was_ the first one I watched from my Recs. In searching for how to describe it, I will say it was a bit like The Godfather of cooking videos. It was dark, fascinating, tragic, a bit of a cautionary tale to say, even if you're becoming familiar with The Julia and her ways, do not underestimate her...but also a journey of determination that can end with a victory and a grasp of The Kitchen itself. I too have a sneaking suspicion that a lot of folks came onboard about that time to create a possible tipping point. I would argue for all these reasons that it should be number one, but it's also OK where it is. PS The Jelly Roll(s) and the Cassoulet were the sequels to The Godfather. I found you with the Tosi Apple Cider Donut Cake video (which I have made, too, and did not use "used fry oil"!!!!). By the way, I met Christina Tosi recently, and she's a peach. Inspired by your videos, a couple months ago, I put Julia's two book collection on my Amazon wish list, and one day I received...what I *thought* was cat food that I had ordered...as my cat is finicky. The package sat there for weeks, and at 3am over a week ago, I opened the box to get her some food, and pulled out Julia's two books, and I was like....WTF? Turns out my friend bought me her books for Xmas. So, I'm excited to start cooking and baking with them soon. I like to try Julia Child's recipes, sometimes so much washing up afterwards but worth the effort. Seeing she tried to make them all fool proof I'm glad to see that even you sometimes struggle with them on occasions, I certainly do. My end result may not look very pretty or anything like she would produce but the taste is there and that makes it all worthwhile. Keep cooking and showing us the outcome.

I've been watching for several months now. The dark comedy, the triumphs and failures, a bit of absurdism--I'm hooked. Recently I've been under so much stress that looking at, smelling, cooking, eating most anything has turned me off. And then here comes this end-of-year wrap-up and I remember my favorite moments along the way and suddenly I feel like making a few of these recipes, starting with the soupe au pistou. Wash by soaking in salted water with the juice of a half lemon. They oxidize. You need a saucepan that is big enough to stand your artichokes in and cover them with a lid.
Prepare a stuffing, breadcrumbs, parsley, parmesan cheese, some mince garlic if you like, salt, pepper. Salt your artichokes inside and stuff with a few tablespoons of filling depending how large they are. Fill the saucepan with water so the hearts are submerged but not the whole thing. Crack a couple of garlic and put in the water with a bit of salt and a drizzle of olive oil. Stand up your artichokes so they all fit in....you can put them in before the water and seasoning if easier, which it is. Drizzle oil on the stuffed artichokes, bring water to a boil, cover and reduce heat to simmer for 20 or 30 minutes or until a leaf can be pulled easily.
I can eat a lot of them, delicious cold too....when you get to the choke, if properly cooked can be pulled by your fingers or knife or spoon, don't eat that, we peel the leaves and place half the leaf and pull the bottom bit off. Fun to eat. An excuse to eat with your fingers.

I'm not a pastry chef. I'm barely adequate, but I managed to do his rolled Christmas log cake without it turning into tantrums and tears. (Just made the cake, didn't do the log decorations).
You just need one good success under your belt. The trick is no refrigerator! Gotta let time cool that bad boy down.

Frankly, the whole reason I have watched so many of your videos is you show the mistakes. No one can cook so many meals without making mistakes. I enjoy watching how you get frustrated, and push through anyways, and recover as best as you can, even if its do it all over again. Your early videos helped me remember how much I used to not know early in my life, and I learned about all the techniques from watching cooking shows. I'm still sad about the squab, which is one of my favorite birds. The aspic is also too bad. I love aspic and I've made it for people unfamiliar with it, and they loved it. The trick is to keep the gelatin light, get it from the simmered stock and not from a little packet, make sure it's perfectly flavored, and use a filling that tastes good chilled. I usually choose foie gras, which is excellent chilled. Plain cold liver just won't work. Regardless of it all, you're still an inspiration. Happy New Year!

Jamie, you had me at Orange Cake. It _was_ the first one I watched from my Recs. In searching for how to describe it, I will say it was a bit like The Godfather of cooking videos. It was dark, fascinating, tragic, a bit of a cautionary tale to say, even if you're becoming familiar with The Julia and her ways, do not underestimate her...but also a journey of determination that can end with a victory and a grasp of The Kitchen itself. I too have a sneaking suspicion that a lot of folks came onboard about that time to create a possible tipping point. I would argue for all these reasons that it should be number one, but it's also OK where it is.
PS The Jelly Roll(s) and the Cassoulet were the sequels to The Godfather.

Inspired by your videos, a couple months ago, I put Julia's two book collection on my Amazon wish list, and one day I received...what I *thought* was cat food that I had ordered...as my cat is finicky. The package sat there for weeks, and at 3am over a week ago, I opened the box to get her some food, and pulled out Julia's two books, and I was like....WTF? Turns out my friend bought me her books for Xmas. So, I'm excited to start cooking and baking with them soon. I like to try Julia Child's recipes, sometimes so much washing up afterwards but worth the effort. Seeing she tried to make them all fool proof I'm glad to see that even you sometimes struggle with them on occasions, I certainly do. My end result may not look very pretty or anything like she would produce but the taste is there and that makes it all worthwhile. Keep cooking and showing us the outcome.
