PINK SAUCE PASTA
Preparation time: 10 minutes + boiling time
Cooking time: 15 minutes
Serves: 4
Ingredients:
For Boiling Pasta
2 cup Penne Pasta
Salt to taste
2 tbsp Oil
For Pink Sauce
2 tbsp Oil
3-4 Garlic cloves, coarsely grounded
2 large Onions, finely chopped
1 tbsp Red Chilli powder
6 large fresh tomatoes, pureed
Salt to taste
Penne Pasta, boiled
2-3 tbsp Ketchup
½ cup Sweet Corn, boiled
1 big bell pepper, diced
2 tsp dried Oregano
1.5 tsp Chilli Flakes
2 tbsp Butter
¼ cup Fresh Cream
Few Coriander Leaves, finely chopped
¼ cup Processed Cheese, grated
Process
• In a heavy bottom pan, heat water, add salt and oil, bring to a boil, add pasta and cook for about 90%.
• Strain the pasta in a bowl, add some more oil to avoid from sticking. Reserve pasta water. Keep aside for further use.
• Heat oil in another pan, add garlic and cook till fragrant.
• Add onions and cook till translucent. Add red chilli powder and mix well.
• Add tomato puree and salt, mix well and cook for 5-7 minutes.
• Add pasta and mix well. Add ketchup, sweet corn, bell peppers, oregano and chilli flakes, mix well.
• Add butter and fresh cream, mix well and cook for a minute.
• Garnish with coriander leaves and processed cheese.
Note
• Boil the paste 90%; rest will cook in a sauce
• Don’t overcook the pasta
• After adding cream, immediately remove from the flame, as it will start curdling - Навчання та стиль

Mixing milk based sauce with tomato doesn't sound good. Though tastes great! People say milk n onion should also not be eaten together as it's bad for health. That's why I love chef ranveers recipe. Easy and tasty!

@ChefRanveer, let me give you a tip to cook tomatoes faster when making pasta ;), while boiling pasta, boil the tomatoes together (you may also boil other veggies like sweetcorn and babycorns) yes tomatoes get blanched but the gravy's consistency and flavour is really better - try it once
I can share, being living here in Italy, authentic pasta (vegetarian) which people here locally cook involves:
1. Boiling the water + addition of pasta afterwards and sprinkle salt + 1/2 spoon oil.
2. Add the pesto sauce with the same water from pasta
3. If don't have pesto; Gravy (meat for nveg, otherwise same tamato gravy)
4. Mix them up and along with sprinkle of aged parmesan or parmegiano cheese.
5. Pepper+origano +olives as per requirement.

@sheldon pereira One myth seem never seem to go, oil while boiling pasta, oil and water never mix and oil floats on top. drizzle oil ( preferably Olive if you like that flavor in your final dish). That serves the purpose of keeping them separated and not stick to each other into a lump.
Oil in boiling pasta water serves no purpose, as verified by several prominent chefs across the world.
Al Dante- Personal choice... Also, use Italian imported pasta(it's not overpriced), its better, more firm and less starchy and has a nice bite even without Al Dante... I also cook it longer
Olive oil: You don't add oil to boil packed, dry pasta, If you make fresh pasta like me (sometimes) then add olive oil, that too can be avoided
If you use Italian imported pasta, Then please do wash it in cold water if you make a non-milk based sauce

Please help with one more question/myth.. I have always read and seen that we shouldn't use oil while boiling pasta in water. But you have used a decent quantity of it. Why is that?
To prevent pasta from sticking to one another.
I haven't seen it sticking. In fact what I read is if we add oil, the sauce doesn't stick to pasta that nicely.
@@utubeac09 you're correct. Oil in the water is unnecessary, so is washing pasta. As long as water is in a roaring boil with decent amount of salt, that's all you need.

Hi Ranveer. Loved this video and used it to cook pasta for my friends. They all loved it.
You talk about the gluten percentage in Indian wheat. Since Italian wheats used to make pasta typically contain 12% gluten, and Indian wheats generally range around 6% gluten with Sharbati having the highest gluten percentage, why do Indian manufacturers still make pasta using Indian grown Durum? Wouldn't it just be better to use Sharbati instead?
