材料 Ingredients(六件份量,6 cakes):
水油皮 Water oil dough:
一百一十克中筋麵粉 110g All-purpose flour
三十毫升油(米糠油,花生油或菜油) 30ml oil (Rice bran oil/Peanut oil/Vegetable oil)
二十毫升糖漿 20ml Syrup
四十毫升大熱水 40ml Hot water 80ºC
油皮 Oil dough:
七十五克中筋麵粉 75g All-purpose flour
三十五毫升油(米糠油,花生油或菜油)35ml oil (Rice bran oil/Peanut oil/Vegetable oil)
餡料 Fillings:
二百克新鮮冬瓜 200g Winter melon
五十克生糯米粉(或加工粉或糕粉)50g glutinous rice flour (raw or cooked)
六十克砂糖 60g Sugar
一隻雞蛋黃 1 Egg yolk
八分一茶匙幼鹽 1/8tsp Salt
十克椰絲 10g Shredded coconut
十五克炒香芝麻 15g Toasted sesame seeds
十克無鹽牛油 10g Unsalted butter - Навчання та стиль

Wow so flaky ! Thanks Mama Cheung. I came here looking for recipe because Hang Heung Wife Cake is my favorite but we just bought it and the pastry is no long flaky. The crust is harder. They say it's the same recipe since 1940 but it does not taste the same. Great recipe Mama Cheung

Hi Mama Cheung, I want to ask why use hot water for the water dough? Is it to make it more soft & elastic? Room temperature water will not have the same affect?

I just made these now. They were pretty good but what I would improve for my next time is...
1)use a larger grater size to make the melon more obvious when baked. Because my filling was a bit too mushy for my liking
2)add more sugar to filling. The plain dough will cancel it out so don't worry
Other than that, flakiness was amazing and aesthetics was 10/10

What is the syrup and how do you make it?
Mama Cheung, i made this yesterday and have to give you a thumbs up comment. It's flaky and the pastry melts in your mouth. I did rolled out my pastry very thin, do you think the flakes and melting result is a result of thinny rolled pastry too, or just oil and folding?. Thanks for sharing, and i am making your tomato, tofu soap next week.

It might be rice syrup or corn syrup. Some recipes have the option of using honey instead of syrup.
I just asked the same question too as I wanted to know how the syrup was prepared. 😄

@Maryduc Nguyen, preheat oven 10mins,bake for 15-17 minutes @180 degree C,keep an eye for the color on the pastry as every oven differs from the other.
