    I’m from a small town in Negros Occidental near bacolod and I also grew up eating this dish. It’s one of my favorite “mom’s” dishes. Im so happy that you get to taste and learn that dish, too, erwan. If you want to know other dishes in our province, i’d be more than willing to share them to you :)

    Chef JP Anglo's version of Inubarang Manok is going anywhere. Adding Moscato, batwan, gata... hah! The version is international ewan ko na lang. I prefer the traditional Ilonggo manok, ubad and monggo. I don't think it's the right way to chop the ubad and the process of "cleaning" it. It's very laborious. As far as my memory serves me right, this is the process. First, slice very thinly the ubad. Then get rid of those sticky substance from the sliced ubad by using a stick and make it works like a mixer/beater. After, mash the ubad and it's ready for cooking with the manok and monggo. Please correct me if I made a mistake on this process of preparing the ubad. Thanks.

      The traditional way taste much better.. you are correct sa pag prepare sang ubad. The inubaran na manok has two versions, 1 is kadios, manok, ubad & 2 is monggo, manok, ubad. If monggo, manok ubad pwede ka add gata for another variation but if kadios, manok, ubad, the gata is not suitable.

      Mas masarap pa rin ang original na pag luto ng ubad at tamang pag chop at pag piga. Pina sosyal lng nila.

    My Lolo is always cooked for this dish before when he is still alive...today i miss him from Heaven soo i will cook like chef Jp ways... found Ubad market here in Kuala Lumpur Malaysia today... thanks for the video

    I like native chicken!!!But I'm not eating ubad before!But JP's cooking looks soooo delicious maybe because he used a lot of various spices! really interesting!Hope I can find ubad here in HK.

    My family moved from California to the Philippines when I was a kid & we spent the summers in Aklan, inubarang manok was my favorite! Coconutty, vinegary like adobo except it’s grey 😅 but delicious! We are back in California & no one makes this here ☹️

    The real way of preparing the ubad is you thinly sliced the ubad, It will produce a stringy fiber and you remove it. You remove the inner core (it is hard and bitter), then you chop it finely, whilst you chopping it there will be fibers left and you will remove it further and lastly you throw/sprinkle the ubad against the knife sharp edge to further remove the ubad strings.
    You will know you have a good ubad if there are no fiber strings and it is very fine and you remove the water on by adding salt and squeeze it tight.
    Ubad, Tanglad and Monggo is a must with an option of Malunggay or celery. Ubad should be using native/free range chicken...
    I brought my mom in this local resto here in Bacolod and when she saw the ubad in chunks, she laughed and she did not eat it lol.
    Best Banana for Ubad is the one with Seeds (The fruit contains a lot of seeds) , it is sweeter or alternative is the Saba. In our farm we keep this Banana with seeds just for Ubad purposes.

    I've never tried banana shoots. We cook something similar to this, we call it ginataang manok at ubod. We use bamboo shoots instead. I love this recipe.

    In our province we called it inubadan nga manok. Yes, ilonggo version. Ang kaibahan lng siguro is naglalagay kami ng tanglad at atsuete. Of all the versions kami lang din siguro gumagamit ng alumpiran. I don't kung anong tawag nyan sa tagalog and English pero that's thing na nagbibigay ng konting asim. Btw ang alumpiran is a vine plant.

    Normally, in preparing ubad we use a bamboo skewer to remove parts of ubad that has a lot of resin content. After chopping the ubad, we hold the skewer upright to our palm facing each other and rotating it like making a hand drill. Ubad with high content of resin will stick to the skewer. We normally use batwan also in this dish. The coconut milk actually is optional, but it's best to add to make it more creamy and tasty. I miss this dish.. 🤤

    “When I saw these videos I missed cooking native chicken cebu version. I never tried Inubarang Manok it looks very delicious. How I wish I can find it here in japan. Manok with malunggay is good and healthy maybe you can try it also in your next vlog. 😊

    ubad, always good with chichen and kadios or monggo. the traditional one doenst have gata. and for the ubad the best part is the inner part because it is softer than the outer part and there is a proper way to prepare the ubad you just dont cut it in cubes or whatsoever.

    Chef JP, that's the sosyal version of manok kag ubad. The more traditional is with mongo and tanglad.
