The simulator runs very slow with this code because it continuously and needlessly try to refresh the lcd. Refreshing the lcd more than eye can see is needless. So just put delay(40); after lcd.print(millis()/1000); line and it will work in nearly real-time speed.
delay() pauses the whole program and you don't want that. Just save millies at the start of the program and then check when it goes over a threshold (40 in your case) then reset it. After that you save the current millies and add the threshold for the next compare.

It will work either way, but affect which direction is lower and higher...

Why did you put the resistor value to 250 k ohm
Good question. I usually use 220 Ohm.

You grab the little line on the potentiometer and it rotates to make the LCD darker or lighter
