Thank you so much, David. The processing is awesome to behold! It encourages me to go to the olive farms, visit the processing machines, and taste the pure and newly extracted olive oil! It is plain to see however that the olive oil sold in grocery stores looks "refined" already---it does not look like lightly textured honey anymore as you presented it in this video.

Great video, thanks mate! We've just taken on a 700 tree grove in Aus. You've given us some insight as to what we're in for!
Hopefully my 125 olives are gonna make it to harvest this year. For processing, I grind with big new garbage disposer. It heats up and stops unless I add water, but works pretty good. Then I use an electric ice cream maker to malox the mashed 45-60 minutes. It is put on a slightly ramped sheet of stainless steel and drains pure, clear evo., while waiting to load the mats for pressing. I am currently building new, larger processing plant. This year there is good fruit set and now the desiccating summer is here
Before the monsoons. I have only enough water to give four to six gallons per week to each tree. Hopefully (as in prayer) monsoons will come this year. Without monsoon the olives get shrivelled on the tree. The past many several years of wind, drought, freezes, and me have resulted in 99% failure. 1% I learned something about trees, and myself. Yep, faith and miracles.
I've seen in regular tree gardening, not olives. But the pounding a PVC pipe into the ground closer to the roots and then pouring the water in a couple of pipes hammered into the ground to prevent evaporation.

Yes, Season 2023 I buried the drip system with only emitter above ground because animals were chewing the pipes. This was very successful. The crop load was heavy, but shriveled beyond use. I got about two ounces of beautiful oil. So, by October I saw the trees were in very good shape, but not the olives. So next bloom I intend to trim off at least half of them, giving the trees a better chance to sustain the fruit. No monsoons in 2023. Still no rain, but maybe next week it will.
This year, I think I will bury the emitters in the pipe, it is difficult to maintain them that way though. Also, I think I am going to sell off some trees. Thanks for your interest.

The extra virgin oil we buy in groceries are very comercialized. They look the same color to the one you compared. Your freshly cold compressed olives are more densed, cloudly and I think peppery. Yours is the best. Wow!

Hi Tiogo, here in tunisia, we get from our own olive trees (my family farm) around 3.5 litres of oil from 15kg ofolives. You do the maths 😅. That depends of the tree variety and if it was well cultivated...

Loved your video. We tried growing olives in Central Florida but the trees never flowered. I think our climate was too warm. The trees were beautiful.

Fascinating process. Beautiful trees. I am just wondering, if this would be considered cold pressed if it uses boiling water during separation process? Is there a way to make it cold pressed yourself?
Cold pressed is cold pressed. The hot water does not alter the olive oil, he could've done his own pressed olive oil but it is a labour intensive process at a small scale and it makes local factories alive

I was having the same question. On google they state the yield is between 10 and 20% in weight.

Hi, I'm UK based but the grove is in Italy. Either zone 9 or 10. I can't remember the exact cost but the weight was about 25kg or 55lbs.

Thank you for the vid! I have 70 trees on the property I just moved to & plan on participating in a community mill day. How many days in advanced can I begin harvesting olives? (I have ample refrigeration to prevent fruit fly maturation). I don't have any machinery nor many people to help me, so I imagine I'll be picking for a few days.
If u have a walk-in refrigeration do it, is good. Take them for press once a week, once every two. Mill day?

As somebody who harvests trees in Kalamata for Kalamata olive oil, I found the system interesting in Italy, though I would always be first in the press, while everything is still cold, so that I can have my olives cold pressed. I end up with slightly less oil per kilo of olives, but the oil is much richer and tastier.
Also, I'd be interested to know how much oil you get for each 50 kilo sack of olives?
Depend on the year-weather and type of tree. Big olives produce less oil. Good if you get 10 liters for 50 kilos.

Online sources seem to be saying: "1 tree = 1 litre of oil" (and vastly more) - so I don't know if they're blowing smoke, if you don't harvest all trees, if the producer takes a cut of oil produced, etc 🙂.

Unfortunately, it's not available to buy, just for my own consumption.
At the end it gets mixed with boiling water, now that is where your oil looses its virginity. Cold press means cold press
