A Very Good Breakfast / Lunch Sandwich Recipe - Breakfast Recipe Ideas

A couple of weeks ago I decided to change up my breakfast routine a bit and came up with this easy to make breakfast sandwich - it is so delicious!
For 2 breakfast sandwiches you will need:
4 Slices of sourdough bread (toast or oven broil) - in my opinion, sourdough bread is the best bread for breakfast sandwich
4 Eggs
2tbs Cottage cheese
2 Pinches of salt
10 Slices of English cucumber
1/2 Avocado
Blue cheese
Butter
Thousand Island dressing
Micro greens
